Categories     side-dish

Time 55m

Yield 6 to 8 servings

Number Of Ingredients 16

1 pound rigatoni
Kosher salt
2 tablespoons extra-virgin olive oil
1 pound assorted mushrooms, stemmed, sliced into 1/3-inch pieces
3 tablespoons unsalted butter
3 cloves garlic, smashed and peeled
3 tablespoons all-purpose flour
3 cups whole milk
2 1/2 cups grated Parmesan
2 cups grated Gruyere
2 cups chopped Tuscan kale (3 to 4 leaves)
1 cup grated Gruyere
1 cup panko breadcrumbs
1/2 cup smoked almonds, chopped
1/4 cup extra-virgin olive oil
2 teaspoons lemon zest (2 lemons)

Steps:

  • Preheat the oven to 375 degrees F.
  • For the pasta: Cook the rigatoni in a large pot of generously salted boiling water until al dente, about 3 minutes less than the package directions. Drain, reserving 1/2 cup of the cooking water.
  • Heat the olive oil over medium-high heat in a large Dutch oven. Sear the mushrooms, undisturbed, for 3 minutes; stir, and season with 1 teaspoon salt. Sear on the reverse side an additional 2 minutes. Remove the mushrooms from the pan.
  • Lower the heat to medium and melt the butter in the Dutch oven. Add the garlic and flour, and cook, stirring, for 1 minute. Whisk in the milk and simmer gently until the sauce just thickens, 5 minutes. Remove from the heat and add the Parmesan, Gruyere and 1/2 teaspoon salt. Let cool slightly, then add half of the seared mushrooms, and puree with an immersion blender.
  • In a large bowl, toss the pasta with the sauce and the remaining half of the mushrooms, adding about 1/4 cup of the reserved pasta water or more if desired. Transfer to a baking dish.
  • For the gremolata: In a medium bowl, combine the kale, Gruyere, panko, smoked almonds, olive oil and lemon zest.
  • Scatter the gremolata over the pasta and bake until golden on top and bubbling, about 40 minutes.

Time 30m

Yield 4 servings

Number Of Ingredients 11

2 plump garlic cloves, finely minced
1/2 cup finely minced flat-leaf parsley
1 tablespoon finely chopped lemon zest
2 tablespoons extra virgin olive oil
1 pound cultivated or wild mushrooms, like shiitakes, chanterelles or oyster mushrooms, or a combination, trimmed and quartered if small, cut in thick slices if large
Salt to taste
2 tablespoons dry white wine
Freshly ground black pepper
12 ounces fettuccini or farfalle
1/4 to 1/2 cup pasta cooking water, to taste
1/4 to 1/2 cup freshly grated Parmesan (optional)

Steps:

  • To make the gremolata, place the minced garlic, parsley and lemon zest in a mound and chop them together with a chef's knife. Set aside.
  • Begin heating a large pot of water for the pasta. Meanwhile, heat a large, heavy skillet or wok over medium-high heat. Add 1 tablespoon of the olive oil, and when it's hot, add the mushrooms. Sear the mushrooms, stirring with a wooden spoon or tossing in the pan, until they are lightly browned and begin to sweat. Add the salt and the white wine and continue to cook, stirring or tossing the mushrooms in the pan, until the wine has just about evaporated and the mushrooms are glazed, about 5 minutes.
  • Add the remaining tablespoon of oil and the gremolata and pepper. Cook, stirring, until fragrant, about 1 more minute. Taste and adjust salt. Keep the mixture warm while you cook the pasta.
  • When the water comes to a rolling boil, salt generously and add the pasta. Cook al dente, following the timing instructions on the package. Before draining, remove 1/2 cup of the pasta cooking water. Add 1/4 cup of it to the mushrooms and stir together.
  • Drain the pasta and toss with the mushrooms in a large pasta bowl or in the pan. If it seems dry, add 2 to 4 tablespoons of the reserved cooking water. Serve with Parmesan cheese if desired.

BEST EVER MUSHROOM SOUP

Best Ever Mushroom Soup image

This is a simple but warming soup which tastes so good you will never want tinned again! I learned it at school and have cooked it for years, including at sea for 15 hungry sailors who loved it! This soup is hard to get wrong. Don't skimp on the flour and add a little extra milk if it's too thick. Make sure the flour is all incorporated before adding liquid. Use closed cup, button, chestnut, oyster or mixed mushrooms. Using dark gilled or flat mushrooms will make a darker soup.

Time 1h3m

Yield 2 serving(s)

Number Of Ingredients 8

8 ounces mixed mushrooms
1 medium onion
1 ounce butter
2 tablespoons sunflower oil
1 pint chicken stock
2 tablespoons flour
1/4 pint whole milk
fresh ground salt & pepper

Steps:

  • dice onion small.
  • clean and halve mushrooms.
  • fry onion in the butter and oil for 2 minutes.
  • add mushrooms for a further 4 minutes.
  • sprinkle flour into pan and stir well to remove lumps.
  • add half of the stock.
  • stir and scrape cooked flour off bottom until thickening.
  • add half the milk stirring all the time.
  • continue to add stock and milk in turn until all added.
  • adjust seasoning and add plenty of pepper.
  • simmer very gently for 20 minutes.

Tips:

  • Use fresh mushrooms. Fresh mushrooms have the best flavor and texture. If you can't find fresh mushrooms, you can use dried mushrooms. Just be sure to soak them in hot water for at least 30 minutes before using.
  • Sauté the mushrooms before adding them to the soup. This will help to develop their flavor and give them a slightly caramelized texture.
  • Use a variety of mushrooms. This will give the soup a more complex flavor. Some good choices include cremini mushrooms, shiitake mushrooms, and oyster mushrooms.
  • Don't overcook the soup. Mushroom soup is best when it is cooked just until the mushrooms are tender. Overcooking will make the soup mushy.
  • Season the soup to taste. Mushroom soup can be seasoned with a variety of herbs and spices. Some good choices include thyme, rosemary, garlic, and black pepper.
  • Garnish the soup with fresh herbs. This will add a pop of color and flavor to the soup.
  • Serve the soup with a side of crusty bread or crackers. This will help to soak up the delicious broth.

Conclusion:

Mushroom soup is a delicious and versatile dish that can be enjoyed by people of all ages. It is a great way to use up leftover mushrooms, and it can also be made with a variety of other ingredients, such as vegetables, meat, and seafood. Whether you are looking for a quick and easy weeknight meal or a special occasion dish, mushroom soup is a great choice.
