1 tablespoon plus 2 teaspoons cornstarch
1 tablespoon plus 2 teaspoons balsamic vinegar
3 teaspoons soy sauce
2 teaspoons packed light brown sugar
3 tablespoons extra-virgin olive oil
3 cloves garlic, thinly sliced
1/2 small red onion, cut into thin wedges
4 ounces mixed mushrooms, sliced
1 bunch Swiss chard, stems cut into 1/2-inch pieces, leaves shredded
Kosher salt and freshly ground pepper
Juice of 1/2 lemon
Cooked rice, for serving (optional)

Steps:

  • Toss the beef with 1 tablespoon each cornstarch and vinegar and 2 teaspoons soy sauce in a medium bowl. In another bowl, stir the brown sugar, the remaining 2 teaspoons each cornstarch and vinegar, the remaining 1 teaspoon soy sauce, and 1/3 cup water until dissolved.
  • Heat 1 tablespoon olive oil in a large nonstick skillet over high heat. Add the beef and cook, stirring occasionally, until just cooked through, 2 to 3 minutes. Transfer to a bowl and wipe out the skillet.
  • Heat the remaining 2 tablespoons olive oil in the skillet over high heat. Add the garlic and red onion and stir-fry 2 minutes. Add the mushrooms, chard stems, 1/4 teaspoon salt, and pepper to taste and stir-fry until the vegetables are just tender, 4 minutes. Add the chard leaves and stir-fry until wilted. Stir the brown sugar mixture and add to the skillet along with the beef, stirring, until thickened, 1 minute. Add the lemon juice and season with salt and pepper. Serve with rice.

2 tablespoons cornstarch
1-1/2 cups beef broth
1/3 cup hoisin sauce
2 tablespoons reduced-sodium soy sauce

  • In a large skillet or wok, cook beef over medium heat until no longer pink; drain and set aside. 3 boneless skinless chicken breasts
1/2 cup chicken broth

Steps:

  • Heat stove to medium-high heat.
  • Cut asparagus into 2" pieces and place in a pan or skillet.
  • Chop mushrooms and place in skillet with asparagus.
  • Saute in 1 Tablespoon of olive oil until asparagus goes soft.
  • Set aside, and keep warm.
  • Cut boneless, skinless chicken breasts. In a deep skillet combine diced chicken chunks, chicken broth, 1 Tablespoon olive oil, lemon juice, and lemon pepper.
  • Cook until the chicken is cooked all the way through and there is no pink, and the juices are almost all absorbed.
  • Add the vegetables into the pan with the chicken.
  • Cook until the chicken is a golden brown, and everything is heated through.
  • Add a dash of pepper.

1/2 cup chicken broth
1/4 cup oyster sauce

While stir-fries have long gone hand-in-hand with rice, this recipe shows the versatility of the dish. Here, a quick stir-fry is transformed into a flavorful, unconventional pasta sauce. Five spice is a Chinese seasoning that is said to incorporate all five tastes: sweet, sour, bitter, salty and umami. In this recipe, its blend of star anise, cloves, Chinese cinnamon, Sichuan peppercorns and fennel intensifies the robust flavor of the mushrooms. Don't overcook the broccolini; it should be crisp, with a bright green vibrancy. You could easily substitute broccoli, green beans, snow peas or other crunchy greens. 1 pound mushrooms (any small variety), trimmed and cut into 1/4-inch-thick slices

3/4 pound broccolini, trimmed and cut into 3-inch pieces, thick stems halved lengthwise
3 tablespoons unsalted butter
2 scallions, thinly sliced

2 tablespoons maple syrup or brown sugar
1 tablespoon soy sauce

Steps:

  • Bring a large pot of salted water to a boil. Add pasta and cook according to package instructions, until al dente. Reserve 1 cup of pasta cooking water, then drain the pasta.
  • Meanwhile, heat a large (12-inch), deep skillet over medium-high. When hot, add 2 tablespoons oil and the mushrooms. Cook for 7 to 8 minutes, giving it a stir every 2 minutes or so. The mushrooms will release lots of liquid, but it will evaporate as it cooks. When the mushrooms start to turn golden, add the garlic, five spice and 1/2 teaspoon each salt and black pepper, then cook for 1 minute. Transfer the mushrooms to a plate and set aside.
  • While the mushrooms are cooking, make the sauce: In a small bowl, whisk the oyster sauce, maple syrup, soy sauce, sesame oil and chile oil with 1/4 cup water until combined. Set aside.
  • Heat the same skillet back over medium-high. Add the remaining 2 tablespoons oil and the broccolini. Season with salt and pepper and cook for 4 to 5 minutes, tossing occasionally, until the broccolini is tender but still quite crisp.
  • Add the pasta to the pan, along with the sauce and the butter. Using tongs, toss to combine, then add the reserved pasta cooking water, 1/4 cup at a time, just to loosen the sauce. When the butter has melted, add the mushrooms and toss again. Remove from the heat. Serve topped with scallions.

Steps:

  • Combine water, liquid soy seasoning, arrowroot, ginger, and garlic in a jar. Set glaze aside.
  • Line a plate with paper towels, set tofu on top, and add another layer of paper towels. Place a cutting board on top of the tofu and set a heavy pot on the board. Let sit for 30 minutes, replacing the paper towels as needed, to press as much liquid as possible from the tofu.
  • Place rice noodles into a large bowl, cover with cold water, and soak. Cut pressed tofu into 1/2-inch pieces.
  • Heat oil in a wok over high heat. Add tofu and stir-fry until all sides are golden, about 5 minutes. Add all mushrooms and cook for 2 minutes. Mix in bell pepper and onion, and stir-fry for 2 minutes. Pour glaze on top and cook until sauce has thickened, about 2 minutes.

3 tablespoons cornstarch

1 medium zucchini, cut in half lenghtwise, then 1/2 inch slices
1/4 cup soy sauce
1 tablespoon rice wine vinegar
2 teaspoons sugar
3 garlic cloves, minced

sesame seeds, for garnish (optional)

Steps:

  • Toss the chicken with cornstarch.
  • Heat the canola and sesame oil together in the pan.

I have always had an aversion to the stir-fry. For me it has seemed a technique that sounds easier than it is. Everyone is always impressed that a stir-fried dish takes so little time to cook, but I saw endless chopping followed by frenzied last-minute activity at the stove that I felt unsuited for. I am a clumsy person, and there simply isn't a wok large enough for me to do a stir-fry and not end up with half the ingredients over all the burners. The recipe that won me over was this pork and mushroom dish. Marinating the pork keeps it wonderfully tender and makes the dish deeply flavorsome. And slicing mushrooms is never an effortful activity. Many Chinese cooks add a cornstarch paste at the end of cooking to create a binding sauce, but I love this one starch-free and light. You get depth but sprightliness.

Cover or seal, and allow to marinate at room temperature for 3 hours, or in refrigerator up to 24 hours.
  • Place a large wok or skillet over high heat, and add oil. Allow pan to heat for 1 to 2 minutes, then add pork and marinade. Toss meat until seared and no longer pink. Add scallions, corn and sugar snaps. Stir until sugar snaps turn bright green, about 1 minute.
  • Add bok choy and mushrooms, and stir constantly for about 1 minute. Add bean sprouts and remaining 1/4 cup sherry. Continue to stir until wine is almost evaporated. Transfer to a large platter, sprinkle with cilantro, and serve immediately.

1 cup uncooked long-grain rice
2 tablespoons oil
1 lb boneless chicken breast, cut into 1/2 inch strips
1 lb asparagus spear, trimmed and cut into 2 inch pieces
1 medium onion, cut into 1/2 inch wedges
3 cloves garlic, minced
3 cups sliced fresh mushrooms
1/4 cup water
1/2 cup purchased stir-fry sauce
1/4 cup oyster sauce

Steps:

  • Cook rice according to package directions.
  • Let 1 tablespoon oil get hot in a large skillet or wok over medium-high heat.
  • Add the chicken and stir-fry for 5-6 minutes or until chicken is not pink.
  • Transfer chicken to a plate.
  • Add the other tablespoon oil to skillet.
  • Stir-fry asparagus, onion, and garlic for 3 minutes.
  • Add mushrooms and stir fry 3 more minutes.
  • Add water, cover and steam 2-3 minutes or until asparagus is tender.
  • In a little bowl, mix together the stir-fry sauce and oyster sauce.
  • Add sauce to skillet and also add the chicken back to the skillet.
  • Stir-fry a minute or so until heated.
  • Serve over hot cooked rice.

7 tablespoons vegetable oil

6 tablespoons plus 1 cup canned low-salt chicken broth
1/4 white wine
2 tablespoons oyster sauce
4 teaspoons oriental sesame oil
1/2 teaspoon sugar
6 quarter-size slices peeled fresh ginger, minced
2 pounds broccoli, cut into florets (stems discarded)
1 pound mushrooms, sliced
rice

Steps:

  • Cut steak with grain into 2-inch-wide pieces, then slice thinly across grain. Combine 3 tablespoons water, 2 tablespoons vegetable oil, 2 tablespoons soy sauce, and 2 teaspoons cornstarch in large bowl. Add steak and stir to coat. Refrigerate at least 30 minutes.
  • Combine 6 tablespoons broth, remaining 2 tablespoons soy sauce, and 6 teaspoons cornstarch, wine, and next 3 ingredients in small bowl, stirring to dissolve cornstarch completely.
  • Heat 2 tablespoons vegetable oil in wok or heavy large skillet over high heat. Add steak with marinade and stir-fry until no longer pink, about 2 minutes. Transfer to platter. Add 2 tablespoons vegetable oil to wok. Add ginger and stir until aromatic, about 30 seconds. Add broccoli and stir-fry 1 minute. Add 1 cup broth. Cover, reduce heat and simmer 2 1/2 minutes. Transfer broccoli to bowl. Add 1 tablespoon vegetable oil to wok. Add mushrooms; cook 2 minutes. Return steak and broccoli to wok. Stir sauce, add to wok and stir until sauce thickens, about 30 seconds. Transfer mixture to platter. Serve immediately with steamed rice.

1 sweet onion (medium)
2 tablespoons soy sauce
1 teaspoon Worcestershire sauce
1/2 cup chopped yellow bell pepper
1/2 cup chopped red bell pepper
1/2 cup chopped green bell pepper
1 -2 tablespoon butter
1 lb white button mushrooms
1/8 teaspoon garlic salt
fresh ground pepper

Steps:

  • Chop up bell pepper (discard seeds) into bite sized pieces.
  • Chop or slice onion.
  • In wok or skillet over medium low heat add olive oil.
  • Saute onion for 15 minutes or until translucent.
  • Stir frequently.
  • Add 1 tablespoon soy sauce and worcestershire sauce.
  • Add bell pepper and saute for an additional 15 minutes or until bell pepper is tender.
  • Remove onion & peppers from the heat and set aside.
  • Add butter to wok or skillet and then mushrooms.
  • Saute until tender about 15 minutes. Stir frequently.
  • Add garlic salt & pepper.
  • Add peppers & onion mixture back into the wok and mix with mushrooms.
  • Add 1 tablespoon soy sauce stir until fluid coats peppers, mushrooms and onions.

6 boneless skinless chicken breasts, about 2 lb
2 -3 tablespoons vegetable oil
4 cups mushrooms
4 teaspoons fresh ginger, minced
1 medium jalapeno pepper, seeded and finely chopped
1 pepper or 1 two small red chile, seeded and finely chopped
3 garlic cloves, minced
1/4 teaspoon red chili pepper flakes
1 1/4 cups chicken broth or 1 1/4 cups chicken bouillon
4 teaspoons fish sauce
1 1/2 teaspoons sugar
1 green onion, sliced
1/4 cup fresh basil, coasrse chopped (or shredded)

Steps:

  • Cut chicken into bite-size strips, about 1/4-inch wide. Heat 1 tablespoon oil in a large nonstick frying pan set over medium-high heat. Add about half of chicken ad stir-fry until almost cooked, from 3-4 minutes. Remove to a plate. Repeat with remaining chicken, add more oil if needed. Remove to plate.
  • Add remaining oil to pan, then mushroom, ginger, jalapeno, pepper, garlic, and chili flakes. Stir often until lightly browned, about 5 minutes. Stir in broth, fish sauce and sugar. When boiling, add chicken and and any juices that have collected on plate. Cook uncovered, and stirring often, just until chicken is done as you like it, or feels springy to the touch, about 2 minutes. Sti in onion and basil. Taste and add a little more fish sauce if you like.
  • Spoon over rice in individual bowls.
