CHORIZO STEAMED CLAMS

Chorizo Steamed Clams image

I have always just called these chorizo steamed clams, 'Spanish Clams,' since it seems like there's some variation of this on every Spanish restaurant menu I've ever seen. Sometimes they use beer, or white wine, or sherry; and many varieties of clams can be used. But the common denominator is the spicy, Spanish-style chorizo. I like to serve steamed clams with grilled bread.

Time 30m

Yield 2

Number Of Ingredients 8

1 tablespoon olive oil
½ cup finely diced onions
3 ounces Spanish chorizo sausage, quartered lengthwise, cut into1/4-inch pieces
4 cloves garlic, minced
1 ½ cups white wine
3 pounds littleneck clams, scrubbed and rinsed
⅓ cup chopped Italian parsley
2 tablespoons butter

Steps:

  • Place large pot over medium heat; add olive oil. Stir in diced onion; cook and stir until onions begin to turn translucent, 3 or 4 minutes. Add chorizo; cook and stir to render some fat, about 3 minutes. Add garlic and cook 1 minute. Pour in white wine.
  • Raise heat to high and bring liquid to a boil. Immediately add clams and distribute evenly. Cover and cook until clams open, about 7 minutes. During this time you can occasionally shake the pot to "stir" the clams using potholders or a kitchen towel to hold the pot handles. It's best not to open the lid and stir.
  • When clams have opened, remove pot from heat. Stir in butter and parsley; allow butter to melt. Serve clams in heated bowls with lots of the liquid.

MUSSELS WITH CHORIZO , TOMATO AND WINE

Mussels With Chorizo , Tomato and Wine image

This is an Emeril recipe that got rave reviews from my family. We love mussels, and here in Holland they are locally cultivated. So during the season we try to have them once a week. I try new recipes frequently to change the pace. This recipe is my husbands favorite and gets requested often. It has an amazing flavor. I have changed it a little to suit my family's taste from the original recipe. Have plenty of crusty bread, as the juice is oh sooooo good! This recipe serves either 2 meal portions or a first course for 4-6 people. Rule of thumb in Holland is to serve 1 kg of mussels per person, for a dinner portion.

Categories     Mussels

Time 45m

Yield 2-4 serving(s)

Number Of Ingredients 13

8 ounces chorizo sausage, casings removed & chopped
3 tablespoons unsalted butter
1 yellow onion, finely chopped
1 shallot, finely chopped
1/2 teaspoon fennel seed
1/2 teaspoon fresh ground black pepper
3 garlic cloves, minced
7 roma tomatoes, peeled, seeded and chopped

1/2 cup heavy cream
2 tablespoons finely chopped fresh parsley leaves
4 lbs fresh mussels, scrubbed & debearded
French bread

Steps:

  • In a large saute pan, cook the chorizo until brown over medium-high heat, about 4 minutes. Remove with a slotted spoon and drain on paper towels. Drain off all but 1 tablespoon of fat from the pan.
  • Add butter and when melted, add the onions, shallot, fennel seeds, and pepper. Cook, stirring, until veggies are tender.
  • Add the garlic and tomatoes, and cook, stirring, for 2minute.
  • Add mussels to pan. Add the wine, 1/4 cup cream, and parsley, and bring to a boil. Stir mussels, cover, and cook until the shells have opened, about 6-8 minutes.

Tips:

  • Choose fresh, high-quality mussels. Look for mussels that are tightly closed and have no cracks or damage to the shells.
  • Clean the mussels thoroughly. Use a stiff brush to scrub away any dirt or debris from the shells. Remove the beards (the long, stringy fibers) by pulling them out with your fingers.
  • Use a variety of vegetables in your broth. This will add flavor and color to the dish. Good choices include onions, celery, carrots, leeks, and fennel.
  • Don't overcrowd the pot. The mussels need room to steam evenly. If you have too many mussels, they will not cook properly.
  • Cook the mussels until they are just cooked through. Overcooked mussels will be tough and rubbery. Cook them for 5-7 minutes, or until the shells open.
  • Serve the mussels immediately. They are best enjoyed hot, with a crusty baguette for dipping.

Conclusion:

Steamed mussels with chorizo sausage is a delicious and easy-to-make dish that is perfect for a casual get-together or a special occasion. The combination of the briny mussels, the smoky chorizo, and the flavorful broth is sure to please everyone at the table. So next time you're looking for a quick and easy seafood dish, give this recipe a try.
