Categories     High Protein

Time 25m

Yield 4-6 serving(s)

Number Of Ingredients 6

1 lb angel hair pasta (but spaghetti, fettucine or tagliatelle work as well)
2 cups grated parmesan cheese (fresh is better)
5 large eggs
1/2 lb lean bacon or 1/3 lb pancetta
1 dash salt
1 pinch pepper

Steps:

  • Put large pot on to boil for pasta and cook pasta as directed.
  • Cut the bacon into 2" pieces and add to saute pan on medium.
  • Grate cheese.
  • Break eggs into large bowl and beat until smooth.
  • Add grated cheese to eggs and mix until a paste.
  • When pasta is "al dente", remove and drain.
  • Immediately add pasta to egg/cheese mixture and use tongs to rapidly toss, coating the pasta. (Don't worry about the raw egg, the hot pasta will cook it).
  • Add the bacon with about 1 teaspoon of drippings and continue to toss pasta until a creamy sauce evenly coats the pasta.
  • Serve and garnish with a sprinkle of cheese, fresh ground salt and pepper.
  • Watch your friends and family scrap the bowl!
  • Nice served with a salad and a crisp white wine!

MY FAKE PASTA CARBONARA

My Fake Pasta Carbonara image

I know it's probably not true pasta carbonara, but I love this. It's a bit high on the prep time but well worth the effort. Oh, and it's not for the faint of heart.

Time 3h25m

Yield 6-8 serving(s)

Number Of Ingredients 10

1 lb fresh fettuccine or 1 lb dried fettuccine
1 can black olives, pitted,size doesn't matter
1 lb bulk sweet Italian sausage links or 1 lb sweet Italian sausage link
1/2 lb bacon
1/2 cup fresh grated parmesan cheese
1/2 cup fresh grated romano cheese (or 1 cup of either of the above cheeses)
1/4 cup minced parsley
4 eggs
1/4 cup heavy cream or 1/4 cup whipping cream
1/4 cup butter

Steps:

  • Heat an empty 9 x 12 baking dish or serving dish (I prefer pyrex for this, you can see under it to make sure the ingredients are mixed) in an oven at 250 F.
  • Fry the bacon until well done, crumble into a medium to large bowl.
  • Reserve the fat for later use if you'd like.
  • Either by hand or with a food processor, finely mince the black olives and combine with the bacon.
  • In a medium skillet, brown the sausage over medium heat until cooked through.
  • Combine with the bacon/olive mixture and set aside.
  • Beat the eggs and cream together until well combined but not frothy.
  • Meanwhile, boil the fettucini in about 6 quarts of boiling water, 6 minutes for fresh fettucini, about 12 for dried (a little less if you like al dente).
  • Drain well.
  • Remove the baking dish from the oven.
  • The next step sort of has to be done quickly: Dump the pasta into the baking dish and toss immediately with the butter.
  • Pour the egg and cream mixture over the pasta and toss to coat, enjoying the sizzling sound you hear.
  • Add the sausage/olive/bacon mixture and parsley, and toss to combine.
  • Add the parmesan cheese and toss again to combine.
  • Serve immediately.
  • This pasta keeps well in the fridge for about 3-4 days.
  • This is a good thing, because as everyone knows, the thing about Italian food is, you eat it and you're hungry again 20 days later.

NIF'S BACONLESS PASTA CARBONARA WITH BREADCRUMBS

Nif's Baconless Pasta Carbonara With Breadcrumbs image

I had lots of eggs and linguine on hand, so what do you make with that? Carbonara! This version is without bacon because I just didn't have any. It may look like a lot of instructions but I literally had this on the table in 15 to 20 minutes because you do most of the work while the pasta is cooking. Enjoy!

This is what we make when we're in a hurry, served with a salad. Not exactly for the dieters, but it does satisfy. 8/24/07, my baby is leaving for college tomorrow and has requested this as her "last" meal. She usually hates pasta, but she loves this dish.

Tips:

  • Use high-quality ingredients. This will make a big difference in the final flavor of your dish. Look for fresh pasta, good quality Parmesan cheese, and pancetta or guanciale that has been cured for at least six months.
  • Cook the pasta al dente. This means that it should be cooked until it is still slightly firm to the bite. Overcooked pasta will be mushy and will not hold the sauce well.
  • Use a large skillet to cook the pancetta or guanciale. This will help to ensure that it is evenly cooked and that it does not stick to the pan.
  • Do not add the eggs and cheese to the pasta until it has been removed from the heat. This will prevent the eggs from scrambling and the cheese from becoming grainy.
  • Serve the pasta immediately. Carbonara is a dish that is best enjoyed fresh. If you need to make it ahead of time, you can cook the pasta and pancetta or guanciale in advance and then reheat them before serving.

Conclusion:

Carbonara is a delicious and easy-to-make pasta dish that is perfect for a weeknight meal. It is also a great way to use up leftover pasta. With a few simple tips, you can make a carbonara that is sure to impress your family and friends.
