1/4 cup butter, softened, divided
1 granny smith apple, peeled cored and thinly sliced
1 tablespoon sugar, to taste
1/2 teaspoon ground cinnamon
1/2 teaspoon ground cardamom
8 slices rustic round loaf bread, thick slices
8 ounces havarti cheese, 8 thin slices

Steps:

  • Melt 2 tablespoons of butter in a skillet over medium heat.
  • Add apples, sugar, cinnamon and cardamom; cook about 7 minutes, stirring frequently until most of the apple juices are reduced and the fruit is coated with a syrup.
  • Remove pan from heat; set aside.
  • Place four slices of the bread on a griddle.
  • Top each with one slice of Havarti, 1/4 of the spiced apples, another slice of Havarti, and top with the remaining slices of bread.
  • Butter the sandwich tops.
  • Turn over and butter again.
  • Place griddle over medium heat.

½ Granny Smith apple - peeled, cored and thinly sliced

1 piece ciabatta sandwich bread, about 4 1/2 inches long
2 large slices havarti cheese, sliced thin
3 large slices prosciutto
1/2 Fuji apple, cored and sliced into half-moons 1/8 inch thick
1 1/2 teaspoons butter

  • Split ciabatta, and place one slice of cheese on one half. Top with prosciutto, followed by apple slices, the second slice of cheese and the other half of the bread.

Went into the kitchen yesterday and noticed these two apples setting on the counter. Well got the idea to make a sandwich with what ever cheese I had in the refrigerator and came up with this. Had a package of Havarti cheese and another hard cheese in the crisper so I pulled out the Havarti.As I was making them our neitghbor came to visit and I made her one also. Well, needless to say we all went a little nuts over this sandwich. My neighbor wrote down what I had done with the apples. We will be making these again very soon. I'm thinking this could also be a great dissert dish also. MMMMMM?
