1 cup butter, melted
1/2 cup granulated sugar
1/2 cup brown sugar
1 teaspoon vanilla
2 eggs
1/2 cup flour
1/2 cup pecans
1 cup chocolate chips
1 (9 inch) unbaked pie shells

Steps:

  • Preheat oven to 350 degrees.
  • Cream the butter and sugars with an electric mixer. Add the vanilla, eggs and flour and mix well. Stir in chocolate chips and pecans, and pour into an unbaked pie crust.
  • Bake for 45 and bask in the compliments. No one will ever guess how easy that was!

Tips:

  • Prep Ahead: For the Mint Brownies, make the brownie batter and mint ganache frosting a day ahead. This will allow the flavors to meld and the frosting to set properly.
  • Chill Before Cutting: After baking the Mint Brownies, let them cool completely before transferring them to the refrigerator to chill for at least 30 minutes. This will make them easier to cut into clean, even squares.
  • Use Fresh Mint: For the best flavor, use fresh mint leaves in both the Mint Brownies and the Mint Julep Cupcakes. Fresh mint has a more intense flavor than dried mint and will really make these desserts shine.
  • Make the Mint Julep Frosting Ahead: You can make the Mint Julep Frosting up to 3 days ahead of time and store it in an airtight container in the refrigerator. When you're ready to use it, let it come to room temperature for about 30 minutes before spreading it on the Mint Julep Cupcakes.
  • Garnish with Fresh Mint: Before serving, garnish both the Mint Brownies and the Mint Julep Cupcakes with fresh mint leaves for a pop of color and flavor.

Conclusion:

In conclusion, the Kentucky Derby is a great excuse to indulge in some delicious desserts. With their rich chocolate flavors, refreshing mint accents, and festive decorations, these Mint Brownies and Mint Julep Cupcakes are sure to be a hit at your Derby party. So whether you're a fan of the races or just looking for a sweet treat, be sure to give these recipes a try. They're sure to become your new Derby Day favorites!
