MOM'S AMERICAN CHOP SUEY

Mom's American Chop Suey image

Total comfort food for me. My mother made this when I was growing up and now I make it for my family. This is for a large amount so I can freeze some for another meal. You might need to add another can of tomato soup if it seems to dry. Feel free to add more onions, peppers and mushrooms if you want.

MOM'S AMERICAN CHOP SUEY (1950'S BASIC)

Mom's American Chop Suey (1950's Basic) image

A school lunchtime classic. Quick and easy to make. Very bland but has remarkable taste. My sister has tried it and say it's just as she remembers Mom's. All you need to finish this recipe is some Kraft shaker cheese to complete the memory. Mom probably got the recipe from a 1950 vintage Betty Crocker cookbook. Quantities are approximate. Mom seldom measured anything. We usually make a double batch. Enjoy. If you add a bit of garlic powder, chili powder and a can of kidney beans you would create Mom's Chili Mac Recipe.

First off, let me say....it's bland. That's the way they cooked way back when!!!! Or maybe my mom did cause my dad was a meat & potato man, nothing spicy for him. I spice our's up by adding stuff!! I'm just giving you her recipe for some real comfort food. Four of us kids(oldest being 71 and youngest being 55) still make this. You have to add what you like to it. I can't change her recipe. MIMI'S AMERICAN CHOP SUEY

Mimi's American Chop Suey image

When I was little my mom made this recipe a lot. It was during World War II and it was very inexpensive to prepare. I loved it. I guess you would call it a comfort food for me as I was always so happy when I asked, "What's for supper" and Ma answered, "Chop Suey". She never called it "American Chop Suey" except on her recipe card. It was always "Chop Suey". I can't believe that I haven't posted this as I still make it often. I guess I figured it wasn't fancy enough and everyone knew about it, but because I don't want to lose it, I am posting it now. You will have most the ingredients in your pantry and freezer--there are only five plus salt and pepper.

This is a quick recipe using 'canned' spaghetti. We always ate in on Friday nights before we would go to the football games. It is also excellent when served the next day, as the flavors have a chance to mix.

Tips:

  • Prep your ingredients beforehand: Chop the vegetables and mince the garlic before starting to cook. This will save you time and allow you to focus on the cooking process.
  • Cook the ground beef in a large skillet: Ensure the skillet is big enough to accommodate the meat and vegetables comfortably without overcrowding
  • Brown the beef in batches: If cooking all the meat at once causes the pan to become crowded, cook it in multiple batches to prevent steaming, ensuring even browning.
  • Drain excess grease: Use a slotted spoon or colander to drain any excess grease from the cooked beef before returning it to the skillet.
  • Sauté vegetables until tender: Cook the vegetables over medium-high heat, stirring occasionally, until they are tender but still retain a bit of a crunch.
  • Add the sauce ingredients: Combine ketchup, water, vinegar, soy sauce, Worcestershire sauce, and brown sugar in a bowl before adding them to the skillet.
  • Simmer the sauce: Bring the sauce to a simmer and let it cook for 5-10 minutes to allow the flavors to meld.
  • Return the beef to the skillet: Once the sauce has simmered, return the cooked beef to the skillet and stir to coat it in the sauce.
  • Serve over rice or noodles: Plate the American Chop Suey over cooked rice or noodles and garnish with chopped green onions, if desired.
