Ok, southern secret to this pie.... limeade!!!! I know it sounds ridiculous, but the end result is pretty darn delicious. So super easy to make. (**Time noted includes chilling pie overnight.)

8 inches graham cracker pie crust
1 (14 ounce) can sweetened condensed milk, Eagle Brand
1 large lime, juice and zest of (preferably a Key lime, but not necessary)
1 (9 ounce) container Cool Whip, softened
1 (6 ounce) can frozen limeade concentrate
4 drops green food coloring

Steps:

  • Use a large mixing bowl; grate rind (zest) of lime, add squeezed lime juice frozen limeade and sweetened condensed milk to the bowl. Mix well.
  • Add Cool Whip; mix well again.
  • Spoon into prepared pie crust.
  • Swirl top with spoon.
  • Cover; chill overnight.
  • Keep chilled until serving.

4 jumbo egg yolks
½ cup Key lime juice
1 (8 inch) graham cracker crust

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Whisk condensed milk and egg yolks together in a large mixing bowl. Mix in Key lime juice; mixture will be thin at first but will thicken as it is whisked. Whisk until smooth and thick. Pour into the graham cracker crust.

In the shop, we use only fresh key limes (they're an essential part of this masterpiece), which are imported from Mexico and Central America and are available year-round. Squeezing them does take some extra effort and determination, but it's worth all the trouble when you're rewarded with that first bite of fresh Key Lime Pie.

Yield Makes one 9-inch pie, 6 to 8 slices (level: moderate)

Number Of Ingredients 7

1 partially baked 9-inch Traditional Pastry Piecrust shell (page 6)
6 large egg yolks
3 teaspoons finely grated key lime zest
Two 14-ounce cans sweetened condensed milk
1 cup fresh key lime juice
2 cups Whipped Cream (page 193)
1 lime slice

Steps:

  • Preheat the oven to 350°F.
  • To prepare the filling, using an electric mixer on high speed, beat together the egg yolks and lime zest, about 1 minute. Add the condensed milk and mix again. Reduce the speed to medium and add the lime juice. Mix for 1 more minute until thoroughly combined. Pour the filling into the pie shell.
  • To bake, place the pie plate on a baking sheet and bake for 15 to 20 minutes, or until the pie is firm in the middle but still soft to the touch. Transfer the pie plate to a wire cooling rack and allow the pie to cool and set for 45 minutes. Refrigerate for at least 1 more hour before serving.

1 1/2 teaspoons lime rind, grated
1 cup whipping cream
