¼ cup chopped onion
¼ cup quick-cooking oats
⅛ cup cornmeal
1 cup dried bread crumbs
1 ½ teaspoons salt
1 tablespoon white sugar
1 egg, beaten
½ cup tomato juice
½ cup water
1 tablespoon barbecue sauce
1 dash liquid smoke flavoring
1 tablespoon distilled white vinegar
¼ cup ketchup
1 tablespoon brown sugar
2 teaspoons prepared mustard
2 dashes liquid smoke flavoring

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, combine the beef, onion, oatmeal, cornmeal, bread crumbs, salt, sugar, egg, tomato juice, water, barbecue sauce, 1/8 teaspoon liquid smoke and vinegar. Mix together thoroughly and place mixture into a lightly greased 9x5 inch loaf pan.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease an 8 1/2 x 4 1/2 inch loaf pan.
  • Combine milk and soft bread crumbs in a small bowl and allow to soften, about 5 minutes.

4 slices white bread, cut into small cubes
2 large eggs
3/4 cup milk
1/4 cup finely chopped yellow onion
1/4 cup finely chopped celery
1 tablespoon Worcestershire sauce
1 teaspoon kosher salt
1/2 teaspoon dried poultry seasoning
1/2 teaspoon black pepper
1 cup ketchup
2 tablespoons dark brown sugar
2 tablespoons light karo syrup

Steps:

  • Preheat oven to 350 degrees F and line a rimmed baking sheet with foil, set aside.
  • In a large bowl add ground beef, cubed bread, eggs, milk, chopped onion, chopped celery, Worcestershire sauce, kosher salt, poultry seasoning, and black pepper.
  • Using your hands, mix all the ingredients together until well combined. Because the meat is cold I usually have to take a few breaks to warm my hands up while mixing. You can also use a silicone spatula BUT I think it gets better mixed by hand.
  • Once your meat is mixed place it on the baking sheet and form into a loaf. I usually make my loaf about 6 inches wide by 12 inches long.
  • Add to the preheated oven and bake for 45 minutes.
  • While the meatloaf bakes mix together ketchup, dark brown sugar, and light Karo syrup.
  • After an hour of baking remove the meatloaf, top with ketchup mixture, and place back into the oven.
  • Cook for another 15 minutes or until the meatloaf is fully cooked (it should feel firm) and the ketchup mixture on the top has started to bubble.
  • Remove from the oven, let rest for 5 minutes, slice, and enjoy.

1 pound pork sausage, meat removed from casings
2 eggs
1 cup panko breadcrumbs
One 32-ounce can whole peeled tomatoes
1/2 cup red wine vinegar
1/2 cup Worcestershire sauce
2 teaspoons dried oregano leaves
2 teaspoons ground black pepper
2 teaspoons dried thyme leaves
1 teaspoon kosher salt
1 teaspoon seasoning salt
5 cloves garlic
1 yellow onion
1 Anaheim chile
1/2 red onion
1/2 cup ketchup
1/2 cup tomato paste
1/4 cup yellow mustard
Kosher salt and ground black pepper

Steps:

  • For the meatloaf: Preheat oven to 350 degrees F. Place beef, sausage, eggs and panko in a large bowl. Set aside.
  • Place tomatoes, vinegar, Worcestershire, oregano, pepper, thyme, kosher salt, seasoning salt, garlic, yellow onion, chile and red onion in a high-powered blender and puree. Reserve half of this mixture for the tomato gravy. Pour the remaining half into the mixing bowl with the meat.   • Pack the meatloaf mixture into a 6-by-11-inch pan (or something similar). Place pan on a baking sheet to catch any fat that spills out during cooking. Bake the meatloaf until an instant-read thermometer inserted in the center registers 155 degrees F, 1 hour 30 minutes. Let meatloaf rest for 10 minutes, then pour the fat out of the pan.
  • For the tomato gravy: Meanwhile, whisk together ketchup, tomato paste, mustard and reserved vegetable mix in a saucepan. Place over medium heat and bring up to a simmer.
