Sunny's Easy Peachy Jalapeno Cornbread image

Provided by Sunny Anderson

Time 55m

Yield 8 mini loaves

Number Of Ingredients 9

Two 8.5-ounce boxes cornbread mix (I prefer Jiffy)
2 large eggs (or according to box instructions, remembering to double)
2/3 cup whole milk
1/2 cup chopped canned peaches in syrup, drained and syrup reserved
2 teaspoons chili-lime seasoning
2 jalapenos, finely chopped, seeds included (about 1/3 cup)
1 tablespoon salted butter, melted
1 tablespoon fresh lime juice
1 tablespoon salted butter

Steps:

  • For the batter: Add the cornbread mix to a large bowl. Whisk the eggs, milk, peaches, chili-lime seasoning and jalapenos in a medium bowl. Fold the egg mixture into the cornbread mix. Let rest 5 minutes.
  • Preheat oven to 400 degrees F. Brush 8 mini loaf pans with the melted butter. Pour a scant 1/2 cup of the batter into each of the loaf pans and spread evenly (each should be about three-quarters of the way full). Bake until the tops are golden, about 20 minutes.
  • For the glaze: Add 1/4 cup of the reserved peach syrup to a small pot, then add the lime juice and butter. Stir together and heat until everything begins to simmer. Remove the cornbread from the oven and immediately pour the glaze over the top of the loaves. Allow it to soak in. Serve warm.

NANNY'S INDIANA CORN BREAD

Nanny's Indiana Corn Bread image

Best made in a caste iron skillet. It took me years to find a recipe that tasted just like my Great grandmothers corn bread. She would measure with her palms and put " A little of this, a dash of that" in her food and never wrote anything down. She took with her so many amazing recipe's that I'm slowly and surely finding. One day I'll make a recipe book with just foods that she made in it. She was an outstanding southern cook.

Number Of Ingredients 10

1 cup(s) yellow cornmeal (fresh, and preferably stone-ground)
1 cup(s) unbleached all-purpose flour
1 tablespoon(s) baking powder
1/4 teaspoon(s) salt
1 1/4 cup(s) buttermilk
1/4 teaspoon(s) baking soda
1 - egg
1 tablespoon(s) sugar (optional)
1/4 cup(s) corn oil
2 tablespoon(s) unsalted butter or lard

Steps:

  • Put the skillet in the oven and preheat to 375 degrees.
  • Combine the dry ingredients except for the baking soda in a bowl.
  • In another bowl, mix the buttermilk and the baking soda. Set aside.

  • When the oven is preheated, toss the lard into the skillet and let it melt.
  • Meanwhile, pour the wet ingredients into the dry, and mix in as few strokes as it takes to just make the dough come together.
  • Pull the skillet out of the oven, swirling to get the butter covering the bottom and up the sides of the skillet. Pour the batter immediately into the pan, smoothing the top, then back into the oven for about 25 minutes, or until golden brown and pulled away from the sides of the pan. Turn out onto a cutting board, cut into wedges and serve.

Tips:

  • Use fresh corn. Fresh corn will give your cornbread the best flavor. If you can't find fresh corn, you can use frozen corn, but be sure to thaw it completely before using.
  • Don't overmix the batter. Overmixed batter will make your cornbread tough. Stir the batter until the ingredients are just combined.
  • Use a hot oven. A hot oven will help your cornbread rise and brown properly. Preheat your oven to the temperature specified in the recipe before you start baking.
  • Don't open the oven door while the cornbread is baking. Opening the oven door will cause the cornbread to fall.
  • Let the cornbread cool before serving. Cornbread is best served warm, but it's important to let it cool slightly before cutting into it. This will help prevent the cornbread from falling apart.

Conclusion:

Nanny's Indiana Corn Bread is a delicious and easy-to-make recipe that's perfect for any occasion.
