This is my favorite way to cook haddock. The recipe was originally for baked stuffed shrimp, so you could use it for that also.

1 1/2 lbs haddock
3/4 cup milk (for soaking the fish in) (optional)
6 tablespoons butter
2 tablespoons onions, chopped fine
1 garlic clove, minced
1/4 cup dry sherry
1 tablespoon dried parsley
1 dash paprika
salt, to taste
1/2 cup breadcrumbs
1/2 cup crushed butter flavored cracker (such as Ritz or Townhouse)

Steps:

  • Preheat oven to 350°F.
  • Rinse fish and then soak in milk (This will take away any "fishiness").
  • Melt butter in a small frying pan. Add onion and saute until softened, then add garlic.
  • Remove from heat, add sherry, parsley, paprika and salt to taste.
  • Mix bread crumbs with crushed cracker crumbs.
  • Remove fish from milk, rinse again, then place in a baking dish.
  • Pour crumb mixture over fish.
  • Then pour butter/sherry mixture over crumbs.
  • Bake at 350°F for about 25 minutes. Place under broiler on high until golden brown and slightly crispy. (Watch it closely, this does not take long.).

1-1.5 lbs. haddock (patted dry (or cod))
1 cup plain breadcrumbs (or seasoned, see note)
6 tablespoons salted butter (melted (see notes))
kosher salt and black pepper
lemon wedges and fresh parsley (for serving (optional))

Steps:

  • Preheat oven to 350 degrees.
  • Put a spoonful of the melted butter in a baking sheet or dish and spread to coat the bottom.
  • Combine the bread crumbs (1 cup) with the rest of the 6 tablespoons of melted butter.
  • Salt and pepper both sides of the fish liberally (I used about 1 teaspoon kosher salt and 1/4 teaspoon pepper), and lay in the buttered baking dish.
  • Spread bread crumbs - all of them - evenly over the top of the fish. I use my hands to sprinkle it on (it won't really stick like traditional breading - it's more like a topping).
  • Bake for 15 minutes, or until fish is cooked thoroughly (and flakes easily).
  • Serve with a squeeze of lemon juice and a garnish of fresh parsley, if desired.

1 whole Fresh Haddock fillet Cut in half
1 Sleeve Ritz crackers Finely crushed
1 stick Salted butter Melted
1/4 cup Parmesan cheese Grated
1 tablespoon Dried parsley or 1/8 cup freshly chopped
Salt and pepper

Steps:

  • Preheat oven to 400 degrees Fahrenheit. In a large ziplock bag, crush crackers with a rolling pin until crumbs are fine with no big pieces. Melt butter in a microwaveable liquid measuring cup on med power to keep butter from separating, check butter every 10 seconds and set aside when melted. Cut the Haddock fillet in half to make 2 fillets. Season with salt and pepper on both sides. Pour a small amount of butter in a 8x8 or 8x10 baking dish to lightly coat the bottom of the pan, place Haddock fillets side by side in pan. Mix the cracker crumbs in a medium mixing bowl with the Parmesan cheese and parsley until combined well. Pour half the remaining butter into the crumb mixture and mix well until all the crumbs are coated evenly. Spread crumb mixture gently and evenly over the tops and edges of the haddock fillets. Drizzle any remaining butter over the crumb mixture. Place in center of oven and bake for 15 - 17 minutes until golden brown and bubbly around the edges. Remove from oven and serve with a lemon wedge.

1 cup Harris Teeter milk
1 tsp lemon juice
2 tsp Harris Teeter Worcestershire sauce
Harris Teeter salt

1/2 cup Harris Teeter olive oil
2 tsp paprika
1/4 lb buttery, flaky crackers, finely crushed
1/2 lb Harris Teeter butter, melted
1/2 cup white wine

  • 1.Marinate fish in milk, lemon juice, Worcestershire sauce, salt and pepper, olive oil, and paprika for 2 hours (the longer the better).2.Preheat oven to 400 degrees F.
