BASIL CREAM SAUCE

Basil Cream Sauce image

After a mad search on the net for a recipe for this sauce I had to create my own. This can be reheated in the microwave without the usual cream sauce defects. I just love the light green color and how well it displays over tri color or regular pasta, salmon and grilled chicken. I have been putting this on everything.

New Potatoes in White Sauce Recipe - (3.8/5) image

Provided by msippigrl

Number Of Ingredients 7

3 pounds red new potatoes, peeled or scraped, then cut into 1 to 1 1/2" chunks (can leave whole if small)
1 teaspoon salt
2 cups whole milk or half-and-half
1/2 cup all-purpose flour
Salt and black pepper, to taste
1/3 stick (5 1/2 tablespoons) margarine or salted butter
Parsley for garnish, optional

Steps:

  • Cover potatoes with water then add 1 teaspoon salt and bring to a boil over medium/medium-high heat; cook until just tender. (Do not overcook or they will fall apart in the sauce.) Drain some of the water off, if needed, so that the potatoes are less than half covered. Stir 1 1/4 cups of the milk into the potatoes and bring back up to a boil. Meanwhile, in a small mixing bowl whisk together the remaining 3/4 cup milk and the flour until completely smooth. Once potatoes are boiling again, pouring in a thin stream while stirring rapidly, add the flour mixture to the potatoes and cook until thickened on medium/medium-low heat, stirring frequently. If sauce is not thick as preferred, it can be adjusted by whisking together a little more milk and flour and stirring it into the potatoes and sauce. When thickened, season with salt and freshly cracked black pepper. Add butter and cover the pot until it melts. Pour into a serving bowl and garnish with parsley, if desired. Great accompaniment for pork chops or baked ham and cornbread.

TWICE-BAKED POTATOES WITH BASIL AND SOUR CREAM

Twice-Baked Potatoes with Basil and Sour Cream image

Categories     Dairy     Herb     Potato     Side     Bake     Summer     Poker/Game Night     Potluck     Gourmet     Sugar Conscious     Vegetarian     Pescatarian     Wheat/Gluten-Free     Peanut Free     Tree Nut Free     Soy Free     No Sugar Added     Kosher

Yield Serves 8

Number Of Ingredients 5

8 medium Yukon Gold or other yellow-fleshed potatoes (about 2 3/4 pounds)
5 tablespoons unsalted butter, softened
1/2 cup milk
1 cup packed fresh basil leaves
1/2 cup sour cream

Steps:

  • Preheat oven to 400°F. With a fork prick potatoes and on a baking sheet bake in middle of oven 1 hour, or until tender. Leave oven on. When potatoes are just cool enough to handle, halve lengthwise and scoop flesh into a 3-quart saucepan, leaving 1/4-inch-thick shells.
  • With a potato masher mash potatoes in saucepan with 3 tablespoons butter. Stir in milk and salt and pepper to taste. Transfer shells to baking sheet and brush insides with remaining 2 tablespoons butter. Season shells with salt and pepper. Mashed potatoes and shells may be prepared up to this point 1 day ahead and chilled, covered. Reheat mashed potatoes before proceeding.
  • Bake potato shells in middle of oven until golden, about 20 minutes. While shells are baking, cut basil into thin strips and stir about three fourths into warm mashed potatoes. Spoon mashed potatoes into shells and bake until heated through, about 10 minutes. Serve each potato half topped with 1/2 tablespoon sour cream and some remaining basil.

Tips:

  • To select the best new potatoes, look for firm and smooth potatoes that are about 1 to 2 inches in diameter.
  • Scrub the new potatoes thoroughly under cold water to remove any dirt or debris.
  • If desired, you can peel the new potatoes before boiling them. However, this is not necessary.
  • To boil the new potatoes, place them in a large pot of cold water. Bring the water to a boil over high heat. Reduce the heat to medium-low and simmer for 10-15 minutes, or until the potatoes are tender.
  • To make the basil cream sauce, simply combine all of the ingredients in a blender or food processor and blend until smooth.
  • Serve the new potatoes with the basil cream sauce immediately.

Conclusion:

New potatoes with basil cream sauce is a delicious and easy-to-make side dish that is perfect for any occasion. The creamy sauce is flavorful and complements the tender potatoes perfectly. This dish can be served hot or cold, and it is sure to be a hit with everyone who tries it.
