NIGELLAS GRANOLA FROM FEAST

Nigellas Granola from Feast image

i love granola but i have to change most recipes to suit my nut allergy, i cant eat nuts but i can eat seeds so i replace a lot of things with more seeds, chuck i whatver you ahve got that is avaiable i say! this makes quite a lot and it is half of the nigella recipe! i store it in old washed out coffee jars apparently you should store it in the fridge so that the oils in the seeds dont go rancid. to be honest it never ahngs around that long in our house. I dont half the ginger as i like the taste, i would say to alter the spices to taste. And if i am honest really honest i dont usually measure stuff out i guess, im very naughty heheh

GRANOLA OR MUESLI MUFFINS

Granola or Muesli Muffins image

Another from Nigella Lawson's Feast cookbook. You can use granola or muesli interchangeably here. There was more batter than I usually get for a 12 muffin recipe so I kept filling up the cups more and filled them nearly to the top with some batter still left over but not much. The muffins did not rise much so I guess this was the right thing to do. These are tasty little treats that are also good for you. Enjoy!

Tips:

  • Use a variety of oats. Rolled oats, old-fashioned oats, and steel-cut oats can all be used in granola. Rolled oats are the most common type used, but old-fashioned oats and steel-cut oats will give your granola a chewier texture.
  • Add nuts and seeds. Nuts and seeds add flavor, crunch, and healthy fats to granola. Some popular choices include almonds, walnuts, pecans, chia seeds, and flax seeds.
  • Don't be afraid to experiment with different sweeteners. Honey, maple syrup, brown sugar, and coconut sugar are all good options. You can also use a combination of sweeteners to create a unique flavor.
  • Bake your granola at a low temperature. This will help to prevent it from burning and will give it a crispy texture.
  • Let your granola cool completely before storing it. This will help to prevent it from becoming soggy.
