8 bacon strips, diced
2 cups diced red potatoes
1/2 cup chopped onion
1/2 cup chopped green pepper
8 large eggs
1/4 cup 2% milk
1 teaspoon salt
1/4 teaspoon pepper
1 cup shredded cheddar cheese

Steps:

  • In a 9-in. cast-iron or other ovenproof skillet, cook bacon over medium heat until crisp. Using a slotted spoon, remove to paper towels to drain. Cook and stir potatoes in drippings over medium heat for 12 minutes or until tender. Add onion and green pepper. Cook and stir for 3-4 minutes or until crisp-tender; drain. Stir in bacon. , In a large bowl, whisk the eggs, milk, salt and pepper; add to skillet. Cook and stir until eggs are completely set. Sprinkle with cheese; stir it in or let stand until melted.

This is one of my favorite egg meals. I do not remember when I have started eating this meal, but I am sure I was very young. It can be nice lunch, heavy breakfast or even supper. It is even better if you use spring onion. This meal has Dalmatian flavor (herbs, olive oil) but you can do it without this ingredients.

6 eggs
20 g bacon (dried, smoked)
70 g onions
5 g salt
3 g pepper (black, roughly grounded)
1/4 teaspoon oregano
1 tablespoon olive oil
1 tablespoon sour cream

Steps:

  • Scramble eggs with sour cream in a separate bowl. Add salt, pepper and oregano.
  • Cut onion into thin rings. Cut bacon into small cubes.
  • Take a Teflon pan; put olive oil and sauté onion rings until soft (it can even get little brown). Add bacon and sauté some more (1-2 minutes).
