Two 3.4-ounce boxes instant coconut cream pudding mix
1 1/2 cups coconut milk, such as Silk
8 ounces whipped topping (3 cups)
One store-bought 9-inch graham cracker pie crust
1 cup store-bought toasted coconut chips

Steps:

  • Combine the pudding mix and coconut milk in a large bowl and whisk until pale and smooth, about 2 minutes.
  • Fold in 1 cup whipped topping until you see a marble effect, about 30 seconds.
  • Pour into the crust, then smooth over with a spatula and refrigerate until set, about 3 hours.
  • Top with the remaining 2 cups whipped topping and the coconut chips. Slice and serve.

FILLING:
2 packages (3.4 ounces each) instant coconut cream pudding
2 cups evaporated milk, chilled
1 cup cold water
2 cups (or an 8-ounce tub) extra-creamy whipped topping
CRUST:
2 cups graham cracker crumbs
1 stick butter, melted
2 tablespoons sugar
TOPPING:
1 cup (or half an 8-ounce tub) extra-creamy whipped topping
1/2 cup toasted coconut
1/4 cup hot fudge sundae sauce (optional)

Steps:

  • Place crust ingredients in a small bowl. Mix well, making sure crumbs are well coated with butter. Press into the bottom of a 11x7-inch oblong pan. In a large bowl, add the pudding mix, milk and cold water. Beat at low speed with an electric mixer for 2 minutes. Let this stand for about one minute. Fold whipped topping into the pudding mixture until the topping is incorporated into the pudding. Pour on top of the crust. Refrigerate until pudding layer is firm, about 3 hours. Spread whipped topping over pudding layer, making nice swirls. Sprinkle with toasted coconut. Microwave the hot fudge sundae sauce until pourable and drizzle over parfait.

3 (1 ounce) squares semisweet chocolate, chopped
2 ½ cups flaked coconut, toasted
2 (1.3 ounce) envelopes whipped topping mix
1 cup milk
1 (3.9 ounce) package instant chocolate pudding mix
1 ½ cups milk
2 bananas, sliced
8 maraschino cherries

Steps:

  • Have ready a greased 9 inch pie plate. In a saucepan over low heat, melt butter. Stir in chopped chocolate until melted. Reserve 1/4 cup toasted coconut and set aside. Mix remaining 1 1/4 cup toasted coconut into chocolate mixture. Press coated coconut over bottom and up sides of pie plate. Refrigerate 20 minutes or until firm.

1 (5 ounce) package instant vanilla pudding mix
1 ½ cups milk
1 ½ cups flaked coconut
1 (8 ounce) container frozen whipped topping, thawed

Steps:

  • In a large bowl, combine the pudding mix and milk until the pudding mixture thickens. Fold 1 cup of coconut and half of the nondairy whipped topping into the pudding. Pour the combination into the prepared pie crust.
