My husband won't eat beans but LOVES chili, so I had to come up with this variation on an old favorite. Instead, it contains lots of canned tomatoes and onion. This is great served over rice with some shredded cheese and a dollop of sour cream. Ground turkey may be substituted for ground beef.

1 pound ground beef
2 cloves garlic, minced
1 large onion, chopped
2 tablespoons chili powder
1 teaspoon dried oregano
1 teaspoon ground cumin
1 teaspoon hot pepper sauce
1 (28 ounce) can crushed tomatoes
ΒΌ cup red wine vinegar

Steps:

  • Crumble the ground beef into a stock pot or large Dutch oven over medium-high heat. Add the onion and garlic, and cook stirring frequently until beef is evenly browned. Drain off excess grease.

1-1/2 pounds lean ground beef (90% lean)
1 can (14-1/2 ounces) stewed tomatoes, undrained
1 can (8 ounces) tomato sauce
1 small onion, chopped
1 small green pepper, chopped
1 can (4 ounces) chopped green chilies
1/2 cup minced fresh parsley
1 tablespoon chili powder
1 garlic clove, minced
1-1/4 teaspoons salt
1/2 teaspoon paprika
1/4 teaspoon pepper

3 1/2 lbs lean beef chuck roast
7 ounces green chilies, chopped
6 ounces sofrito sauce
14 ounces beef broth
1 onion, diced
5 celery ribs, Sliced
6 ounces tomato paste
16 ounces stewed tomatoes
3 tablespoons chili powder
3 tablespoons paprika
1/2 teaspoon garlic powder

Steps:

  • Cut Beef into small cubes.
  • Sear the outside of the beef in Pot.
  • Add Beef Broth, Chili Powder, Paprika and Garlic Powder and bring to a boil. Simmer for 30 minutes stir as needed.

3 garlic cloves, minced
2 teaspoons olive oil
1 jalapeno, minced
