Make Ahead Easy Cheese-Free Breakfast Casserole image

A variation of Diane in Nebraska's Breakfast Casserole recipe. Great for large groups or working parents. Have the kids help with prep the night before, bake in the morning while the family gets ready for the day. Double the cheese if you want to make the entire pan cheesy. Gives you something to wake up for, and leftovers that work for any time of the day! Also a great option for Breakfast for Dinner night.

Time 1h15m

Yield 1 9x13 casserole, 9 serving(s)

Number Of Ingredients 9

1/4 cup butter
12 eggs
1 teaspoon salt
1/4 teaspoon black pepper
6 cups o'brien frozen potatoes (1/2-inch potato cubes, onions, peppers)
1 cup skim milk
16 ounces ground pork breakfast sausage, cooked

1 1/2 cups cheddar cheese (double this if you are making the whole pan cheesy) (optional)

Steps:

  • Spray a 9"x13" baking pan with non-stick cooking spray.
  • Melt butter and drizzle in the bottom of the pan.
  • Spread the potato cubes mixed with onions and peppers (I use Ore Ida's Potatoes O' Brien) in the bottom of the pan.

I got this recipe from a chef at a hotel where I was staying several years ago. I always make it for our family brunches. It is good for the ones who can't (or won't) eat eggs. It is a big family favorite.

Tips for Making a Perfect No-Egg Breakfast Casserole:

  • Use hearty and flavorful ingredients: Choose vegetables that can withstand baking, such as broccoli, cauliflower, and bell peppers. Select cheeses that melt well and have a bold taste, such as cheddar or mozzarella.
  • Prepare your vegetables properly: Cut your vegetables into bite-sized pieces to ensure even cooking. Sautéing or roasting your vegetables beforehand will enhance their flavor and texture.
  • Don't overmix the batter: Overmixing can result in a tough and dense casserole. Gently fold the wet ingredients into the dry ingredients until just combined.
  • Bake the casserole until golden brown: The casserole is done when the top is golden brown and a toothpick inserted into the center comes out clean. The internal temperature should reach 165°F (74°C) for food safety.

Conclusion:

A no-egg breakfast casserole is a versatile and delicious dish that can be enjoyed by people of all ages. It's a great way to start your day with a nutritious and satisfying meal. With the right ingredients and techniques, you can create a casserole that is both flavorful and healthy. Experiment with different vegetables, cheeses, and herbs to find your favorite combination. Whether you're feeding a crowd or just cooking for yourself, a no-egg breakfast casserole is a great option for a quick and easy meal.
