No Fuss Mandarin Orange Cake w/ Vanilla Coconut Frosting image

There are a number of recipes out there for this cake but, frankly, I don't care for the pineapple-vanilla pudding frosting. Coconut is much more my style! Plus, the cake is moist enough without the pudding on top.

Tips:

  • Use fresh oranges for the best flavor. Clementines or tangerines can also be used.
  • Zest the oranges before juicing them. This will release the flavorful oils from the peel.
  • Don't overmix the batter. Overmixing can make the cake tough.
  • Bake the cake until a toothpick inserted into the center comes out clean.
  • Let the cake cool completely before frosting it. This will help the frosting to set properly.
  • Use a light hand when frosting the cake. A thick layer of frosting can be overwhelming.
  • Store the cake in an airtight container at room temperature for up to 3 days.

Conclusion:

This Mandarin Orange Cake with Vanilla Coconut Frosting is a delicious and easy-to-make cake that is perfect for any occasion. The cake is moist and flavorful, and the frosting is light and fluffy. The combination of orange and coconut flavors is a classic that is sure to please everyone. This cake is also a great way to use up leftover oranges.
