This recipe was in the Pittsburgh PostGazette on November 8, 2009. I haven't tried it yet but it sounds like a great Autumn recipe. Can be made as muffins or loaf and spread with cream cheese or preserves.

1 1/2 cups all-purpose flour
1 cup light brown sugar
1 teaspoon cinnamon
1 teaspoon allspice
1/4 teaspoon salt
2 teaspoons baking powder
1/3 cup walnuts, chopped
1/3 cup dried cranberries
16 ounces butternut squash, thawed (1 package frozen)
2 eggs, lightly beaten
1/2 cup applesauce
1/3 cup apple juice (may use skim milk)

Steps:

  • Heat oven to 350 degrees. Lightly grease a 9x5x3 loaf pan.
  • Combine the flour, sugar, spices, baking powder, nuts and cranberries in a large mixing bowl.
  • Combine the thawed squash, eggs, applesauce and apple juice (or milk) in another large bowl.
  • Make a well in the center of the dry ingredients and pour in the wet ingredients. Fold in until just combined.
  • Pour into the prepared pan and bake in the center of the oven for 1-1/4 hours until baked through (a toothpick inserted into the center comes out clean). If baked as muffins, cooking time will be approximately 30 minutes.

This soup is so easy to make and tastes so good. You can blend it smooth or leave it chunky. You can top with a dollop of sour cream or plain Greek yogurt if you wish. I created this recipe after my nephew's food service class served a very similar version at their 'Big Night' dinner.

1 large butternut squash, halved lengthwise and seeded
2 tablespoons butter, or more to taste
3 large shallots, chopped
6 cups chicken stock, or more as desired, divided
3 Granny Smith apples, cored and chopped

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Pour enough water into a baking dish to be about 3/4-inch deep. Lie squash halves into the water with the cut side facing up.
  • Roast in preheated oven until a fork easily pierces through the flesh, 45 to 50 minutes; Remove from oven and flip squash; let cool enough to handle.
  • Melt butter in a large pot over medium heat. Saute shallots in hot butter until softened, 5 to 7 minutes.
  • Pour 3 to 5 cups chicken stock into the pot; stir. Add apples to the stock; bring to a boil, reduce heat to medium-low, and simmer until the apples are tender, 20 to 30 minutes.
  • Use a fork to scrape the flesh from the butternut squash, finishing with a spoon to get the last bits away from the skin; add to the simmering stock. Add remaining 3 cups stock to the pot, bring mixture to a simmer, and continue to cook until everything is heated through, 5 to 10 minutes.
  • Puree soup with an immersion blender until smooth.

We like this chewy, hearty bread as a substitute for white bread with holiday meals and at breakfast. My five children are grown but still live within "eating distance", so I often bake it in large quantities.

1 package (1/4 ounce) active dry yeast
1/2 cup warm water (110° to 115°)
2 tablespoons molasses
1 teaspoon salt
1/2 to 1 teaspoon caraway seeds
1 cup mashed cooked buttercup squash
3 cups all-purpose flour

Steps:

  • In a large bowl, dissolve yeast in water. Add molasses, salt, caraway, squash and 2 cups flour; mix well. Add enough remaining flour to form a soft dough. Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to greased top. Cover and let rise in a warm place until doubled, about 1 hour. Punch dough down; turn onto a floured surface and shape into a loaf. Place in a greased 9x5-in. loaf pan. Cover and let rise until doubled, about 45 minutes. Bake at 400° for 25-30 minutes or until golden brown. Remove from pan to cool on a wire rack.

This is from the January 2002 Quick Cooking magazine. It was sent in by Joan Hallford, N. Richland Hills Texas. I have made it several times and really like it. The bread is fantastic toasted with butter. It makes two small loafs so I freeze one. There was an Editor's note that fat free Mayonnaise should not be used. One teaspoon vinegar in regular milk replaces the buttermilk.

1/2 cup buttermilk
1/2 cup mayonnaise
1 teaspoon vanilla extract
3 1/2 cups all-purpose flour

1/4 teaspoon salt
2 medium tart apples, peeled and chopped
1 cup raisins, I mix light and dark
1 cup walnuts, chopped

Steps:

  • Pre-heat oven to 375 deg.
  • Combine Eggs, Sugar, Buttermilk, Mayonnaise and Vanilla.
  • In another bowl combine Flour, Baking Powder, Cinnamon, Baking Soda and Salt.
  • Add to egg mixture beat until just combined, do not over mix.
  • By hand fold in Apples, Raisins and Walnuts.
  • Spoon into two sprayed 8X4 loaf pans.
  • Bake at 375 deg. For 1 hour.
  • Do not over bake with all the moisture a toothpick may not come out clean even when the bread is done.
  • Cool for 10 min before removing from pan.
