CAULIFLOWER TAGINE

Cauliflower Tagine image

Fragrant North African spices mingle with cauliflower, vegetables and lemon to create this exotic and easy vegetarian meal. We served this dish and the residents' were delighted - I held back on the spices but not entirely! However, the couscous wasn't as well received; we had to opt for orzo but the residents' would have preferred r i c e! I can't fight "cultural appetites" any longer. :)

Tips:

  • Use fresh vegetables: Fresh vegetables will give your soup the best flavor. If you can, buy them from a local farmer's market or organic grocery store.
  • Roast the cauliflower before adding it to the soup: Roasting the cauliflower will caramelize the sugars and give it a smoky flavor. This will add depth and complexity to your soup.
  • Use a variety of spices: North African cuisine is known for its use of spices. Don't be afraid to experiment with different spices to find a combination that you like. Some good options include cumin, coriander, paprika, and cayenne pepper.
  • Simmer the soup for at least 30 minutes: This will allow the flavors to meld together and develop. The longer you simmer the soup, the better it will taste.
  • Serve the soup with a dollop of yogurt or crème fraîche: This will add a creamy richness to the soup and help to balance out the spices.

Conclusion:

North African cauliflower soup is a delicious and healthy soup that is perfect for a cold winter day. It is easy to make and can be adapted to your own taste. So next time you're looking for a new soup recipe, give this one a try. You won't be disappointed!
