- Separately, wash and peel the vegetables and potatoes, and cut them into bite-size cubes.

- Then add potatoes, and cook another 15 minutes.
- Add the meat and onion, and season to taster with salt and pepper.

- In a slow cooker, add the chuck roast, cooking oil, onions, carrots, turnips, parsnips, celery, shallots, pickling spice, black peppers, bay leaves, juniper berries.
- Add the Guinness stout, water, and bring to a boil. Reduce heat to low and simmer, covered, for 1 hour 30 minutes, or until the meat is very fall-apart-tender.
