NOT YOUR MAMA'S CHICKEN SALAD
I used to get this to-die-for chicken salad at a local deli when I nannied in Chicago. I've since been scouring the net for anything that even RESEMBLES it. Eventually I just gave up and called the deli, begging for the recipe, and they did give it to me. Especially for those "what to cook, it's too damn hot" nights when you're looking for something to make for dinner. Cooking time includes marinating and chilling. Thank you, "Don's Finer Foods" of Lake Bluff, IL!

- Chill.
- Serve alone or on bed of greens with nice, crusty bread and a tall glass of iced tea or lemonade.

JO MAMA'S WORLD FAMOUS SPAGHETTI
My kids will give up a steak dinner for this spaghetti. It is a recipe I have been perfecting for years and it is so good (if I may humbly say) that my kids are disappointed when they eat spaghetti anywhere else but home! In fact they tell me I should open a restaurant and serve only this spaghetti and garlic bread. In response to requests, I have posted the recipe for Recipe #28559 that uses approximately 1/2 of the sauce from this recipe. Have spaghetti one night and lasagna later! Thanks to all of you who have tried my recipe and have written a review. I read and appreciate every one of them! Chef Note: After I posted this recipe I remembered a funny incident--my dear husband usually has a nice bottle of wine handy so when I make a batch of spaghetti I just help myself to a splash of it. On one occasion, there wasn't a bottle opened, but there was a bottle sitting on the counter so I got out the corkscrew and helped myself. For some reason, the spaghetti that night was the best ever. My husband asked what wine I put in it and I showed him the bottle. He nearly fell off the chair. I had opened a rather expensive bottle he had bought to give his boss. Goes to show you--don't use a wine for cooking you wouldn't drink. You get the best results from a good wine!

Steps:
- In large, heavy stockpot, brown Italian sausage, breaking up as you stir.
- Add onions and continue to cook, stirring occasionally until onions are softened.
- Add garlic, tomatoes, tomato paste, tomato sauce and water.
- Add basil, parsley, brown sugar, salt, crushed red pepper, and black pepper.
- Stir well and barely bring to a boil.
- Stir in red wine.
- Simmer on low, stirring frequently for at least an hour. A longer simmer makes for a better sauce, just be careful not to let it burn!
- Cook spaghetti according to package directions.
- Spoon sauce over drained spaghetti noodles and sprinkle with parmesan cheese.
NOT YOUR USUAL PASTA SALAD
I created this salad because I wanted something with a little kick and a lot of texture and taste. This is a recipe you can tweak to make it your own. It keeps well in fridge and is best served cold as a side dish. You can add diced ham or even a can of chunky tuna to make a complete meal.

NOT YOUR MAMA'S PASTA SALAD
This is not your typical pasta salad, ergo the name I gave it. LOL My cousin brought this to a get together once and I was blown away. I have tweaked it some to my taste. For instance, she added garbanzo beans. I hate garbanzos so I omitted them. Don't be afraid to add things you love and drop others. You truly can't mess it up! Enjoy! Note: Photo borrowed from internet. It doesn't show all the ingredients I use, but it's as close as I could find. I'll add a photo of my own next time I make it.

Steps:
- Cook pasta. Rinse in cold water to cool. Drain well.
- In a very large bowl, mix all ingredients together. Add dressing. If you are not serving until the next day, I recommend withholding the tomatoes, cucumber and cheese until shortly before serving, to prevent them from getting too soft or mushy. As this sits, especially if you prepare it the night before, you will find it soaks up the dressing and you will need to add more. Start with one bottle of dressing and go from there. You want it coated well, but not sitting in a pool of dressing.
- Note: I believe my cousin used kalamata olives. I like them ok, but I love green olives, so I use green olives in their place. Experiment with the varieties you love! Enjoy! P.S. If you want a healthier version, omit the salami and/or use chopped chicken breast.
NO MAYO EASY PASTA SALAD
A friend of mine showed me how to make this. It's incredibly EASY and you'll have so many people asking for the recipe! This is also a great pasta salad if you're looking for something without mayo. Add or delete vegetables as you desire!

Tips:
- Use high-quality ingredients. This will make a big difference in the flavor of your pasta salad. Look for fresh, ripe vegetables and high-quality pasta.
- Don't overcook the pasta. Al dente pasta is the best for pasta salad. It will hold its shape and won't get mushy.
- Let the pasta cool completely before adding the other ingredients. This will prevent the pasta from absorbing too much dressing and becoming soggy.
- Use a light and flavorful dressing. A simple vinaigrette or olive oil and lemon juice dressing is a good choice. You can also use a store-bought dressing, but be sure to taste it first to make sure it's not too heavy or sweet.
- Add a variety of vegetables and other ingredients. This will make your pasta salad more colorful and flavorful. Some good options include tomatoes, cucumbers, bell peppers, olives, artichoke hearts, and grilled chicken or shrimp.
- Season the pasta salad to taste. Add salt, pepper, and other herbs and spices to taste. You can also add a squeeze of lemon juice or a drizzle of olive oil.
Conclusion:
Pasta salad is a versatile and delicious dish that can be enjoyed for lunch, dinner, or a potluck. With so many different variations, there's sure to be a pasta salad recipe that everyone will love. So next time you're looking for a quick and easy meal, give one of these pasta salad recipes a try. You won't be disappointed!
