Steps:
- Preheat oven to 350°F Grease a 13-by-9-inch baking pan.
- In a microwave-safe bowl, combine oatmeal and apple juice. Cover and heat on high 2 minutes. Let stand 10 minutes.
- Combine flour, wheat germ, 1/2 cup coconut, baking powder, baking soda and salt. In a separate bowl, combine brown sugar, applesauce, carrots and eggs. Fold into flour mixture. Add oatmeal mixture and stir until just blended.
- Spoon into baking dish. Sprinkle with remaining 1/4 cup coconut. Bake 50 to 60 minutes, until a toothpick inserted in center comes out clean. Cool and cut into bars.
Tips:
- Use fresh shredded coconut: Fresh shredded coconut adds a more intense coconut flavor and aroma to the bars than dried coconut.
- Toast the coconut: Toasting the coconut before adding it to the bars will enhance its flavor and give it a golden brown color.
- Use old-fashioned rolled oats: Old-fashioned rolled oats provide a chewy texture to the bars, while quick-cooking oats will make them too soft.
- Don't overmix the batter: Overmixing the batter will result in tough bars. Mix just until the ingredients are combined.
- Chill the bars before cutting them: Chilling the bars before cutting them will help them hold their shape.
Conclusion:
These oatmeal coconut bars are a delicious and easy-to-make treat that are perfect for breakfast, lunch, or a snack. They are also a great way to use up leftover oatmeal. With their chewy texture, sweet and nutty flavor, and irresistible coconut topping, these bars are sure to be a hit with everyone who tries them.
