FRUIT AND OATMEAL MUFFINS

Fruit and Oatmeal Muffins image

This was a recipe I put together to use up some dried fruit. They are a dense muffin and reduced fat. You can use a sugar substitute to even reduce the calories. I sometimes use an egg substitute, too. These muffins have become so popular with our friends that every time we have a tailgate party or golf get together I must bring them.

Tips:

  • Choose Ripe Bananas: Overripe bananas add natural sweetness and moisture to the muffins. Look for bananas with brown spots for the best flavor.
  • Use Fresh or Frozen Fruit: You can use a variety of fruits in these muffins, such as blueberries, strawberries, raspberries, or peaches. If using frozen fruit, thaw it before adding it to the batter.
  • Add Spices: A dash of cinnamon, nutmeg, or ginger can enhance the flavor of the muffins. You can also add a pinch of salt to balance the sweetness.
  • Don't Overmix: Overmixing the batter can result in tough muffins. Stir just until the ingredients are combined.
  • Fill Muffin Tins Properly: Fill each muffin tin about 2/3 full to allow the muffins to rise properly without overflowing.
