I saved this recipe a long while ago but have not tried it so I am adding it here for future use. The use of grains peak my interest. Serving size is just a guess. Optional: Add 1/4 cup chopped cooked chicken in last 2 minutes of cooking.

3/4 cup oatmeal
1 1/2 cups chicken broth
1 dash salt
1 dash pepper
1/2 teaspoon olive oil
1 teaspoon curry powder
cilantro or mint

Steps:

  • In a pot bring the oatmeal, broth, olive oil, salt and pepper to a boil, reduce to simmer and stir regularly.
  • Add curry at this point if using, or add herbs to last minute of cooking.
  • Total cooking time is usually 5 minutes.
  • Serve warm.
  • Refrigerate left overs.
  • Form into patties, cooking on medium heat in a non-stick pan, or with a touch of olive oil spray, turning once for 3 minutes total cooking time to warm through.
  • Serve with any meal as a side.

1 cup uncooked instant or quick cooking oatmeal
¼ teaspoon ground cinnamon
½ teaspoon white sugar
1 tablespoon canola oil
1/4 (1-pound) package Jimmy Dean Premium Pork Sausage
1 cup lightly sauteed spinach
1 large egg
2 teaspoons maple syrup

Steps:

  • In a small pot with a lid, bring the water to a boil with a pinch of salt.
  • Stir in oats and reduce heat to low. Cover and let cook until the desired consistency is reached.
  • Add cinnamon and sugar, and stir.
  • In a small frying pan, heat 1 tablespoon of oil over medium-high heat for about 30 seconds. Add Jimmy Dean sausage and cook 8 to 10 minutes until browned, stirring frequently to break up the sausage into small pieces, then drain. Remove the sausage and set aside.
  • Add the greens to the frying pan and saute for about 1 minute or until they begin to wilt. Remove from heat.
