NO PEEK BEEF CASSEROLE

No Peek Beef Casserole image

Found this recipe in the small cookbook that came with the Crock Pot I purchased 10 or so years ago. Not sure why it's called a "casserole"--it's more like a stew, but oh, so so good! I didn't use the tapioca though. I waited until about 30 minutes before it was done, and I mixed 1 tablespoon corn starch with 1/4 cup water and added to the Crock Pot. It's fabulous!

Categories     Pork

Time 55m

Yield 4 serving(s)

Number Of Ingredients 13

2 lbs potatoes, peeled and cut into small cubes (about 4 large)
water, to cover
1 small garlic clove
1/4 teaspoon salt
1/2 cup milk
4 tablespoons unsalted butter
1/4 teaspoon white pepper
1 cup smoked sausage, finely chopped
2 green onions, chopped
1 pinch dried marjoram
4 eggs
4 tablespoons swiss cheese, grated
2 tablespoons parsley, chopped

Steps:

  • Preheat oven to 375 degrees Fahrenheit.
  • Combine potatoes, water, garlic and salt in a pan over high heat.
  • Bring to a boil.
  • Reduce heat to medium and cook until potatoes are tender, about 10 minutes.
  • Drain potatoes and place in a bowl.
  • Discard garlic.
  • Add milk, butter and white pepper.
  • Mash well.
  • Add sausage, green onions and butter and mix well.
  • Spread mixture into a large well-greased oval casserole.
  • With the back of a large, moistened spoon, make 4 deep depressions in mixture.
  • Break an egg carefully into each depression.
  • Bake on middle rack of oven for 20 minutes.
  • Sprinkle with grated Swiss cheese.
  • Bake until egg whites are firm, about 3 to 5 minutes more.
  • Sprinkle with chopped parsley and serve.

Tips:

  • To ensure your casserole is cooked evenly, use a casserole dish that is the right size for the amount of food you are cooking. A dish that is too large will cause the food to cook unevenly, while a dish that is too small will cause the food to overflow.
  • Always preheat your oven before baking your casserole. This will help the casserole cook evenly and prevent the bottom from burning.
  • If you are using a frozen casserole, be sure to thaw it completely before baking. This will help the casserole cook evenly.
  • Cover your casserole with foil or a lid during baking. This will help the casserole retain moisture and prevent the top from drying out.
  • Check the casserole for doneness by inserting a toothpick or skewer into the center. If it comes out clean, the casserole is done. If it comes out with food attached, the casserole needs to cook longer.

Conclusion:

Casseroles are a delicious and easy way to feed a crowd. With a little planning, you can create a casserole that will be sure to please everyone at your table.
