2 medium tart apples
1/4 cup dried cranberries
2/3 cup water
1/4 cup packed brown sugar
1 tablespoon honey
Optional: Vanilla ice cream or sweetened whipped cream

Steps:

  • Preheat oven to 350°. Core apples, leaving bottoms intact; peel top third of each. Place in a greased 8x4-in. glass loaf pan; fill with cranberries., In a small saucepan, combine water, brown sugar and honey; cook and stir over medium heat until sugar is dissolved. Pour over apples., Bake, uncovered, until apples are tender, 35-40 minutes, basting occasionally with juices. If desired, serve with ice cream.

8 large rome apples, washed & cored
1/3 cup granola cereal
1/3 cup raisins
1/3 cup slivered almonds
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
1 fresh lemon rind, grated
2 tablespoons lemon juice
1/2 cup honey
1 cup apple juice
4 tablespoons butter
whipping cream, chilled or softly whipped

Steps:

  • Peel off one strip around the center of each apple.
  • Slice a thin piece off the bottom of each and place them almost touching in an oven proof dish.
  • Combine the granola,raisins, nuts,cinnamon nutmeg and lemon peel.
  • Toss to mix well.
  • Divide the filling among the centers of the apples, pack the filling down lightly.
  • In a saucepan combine the lemon juice, honey, apple juice& butter.
  • Bring to a bubbly simmer about 5 minutes.
  • Pour over the apples.
  • Cover with foil and bake 350F degrees for 30 minutes.
  • Uncover the apples and continue baking for about another 30 minutes, basting frequently with the juice.
  • Cool to almost room temp serve with the cream.

2 large honey crisp apples (peeled)
1/2 c brn sugar
1 Tbsp cinnamon, mixed with sugar
1 Tbsp pumpkin pie spices
4 pats sliced butter

  • 1. peel and slice apples in large bowl.
  • 2. measure sugar & spices together, Mix will. Pour over sliced apples, Toss well.
  • 3. pour into small 2 qt casserole dish, place pates of button on top. Cover with foil, and bake 350 degrees 20 min
