Steps:

  • Spoon sugar into a shaker and add about a teaspoon of very hot water for a simple syrup. Stir until dissolved, adding a little more water if needed.
  • Add whiskey and bitters, and stir again. Add several ice cubes and stir well to chill. Strain into an old-fashioned glass, add 2 or 3 big ice cubes, twist lemon peel over the top and drop it in.

1-1/2 cups warm water (110° to 115°)
1/2 cup molasses
6 tablespoons butter, softened
2 cups rye flour

3-1/2 to 4 cups all-purpose flour

Steps:

  • In a large bowl, dissolve yeast in warm water. Beat in the molasses, butter, rye flour, cocoa, caraway seeds, salt and 2 cups all-purpose flour until smooth. Stir in enough remaining all-purpose flour to form a stiff dough., Turn onto a floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease top. 1 envelope (1/4-ounce) dry yeast
1 tablespoon sugar
3 tablespoons melted butter
1 egg
1 cup warm milk (about 110 degrees F)
1 1/2 teaspoons salt
1 cup rye flour
2 1/2 cups bleached all-purpose flour
1 tablespoon caraway seeds
1 teaspoon vegetable oil
1 large egg, beaten

Steps:

  • Combine the yeast, sugar, melted butter, egg, and milk in the bowl of an electric mixer fitted with a dough hook. Beat on low speed for 1 minute. Add the salt, rye flour, all-purpose flour, and caraway seeds. Beat at low speed until all of the flour is incorporated, about 1 minute. Then, beat at medium speed until the mixture forms a ball, leaves the sides of the bowl and climbs up the dough hook. Remove the dough from the bowl. Using your hands, form the dough into a smooth ball. Lightly oil a bowl. Place the dough in the bowl and turn it to oil all sides. Cover with plastic wrap and set aside in a warm, draft-free place until it doubles in size, about 1 hour.
  • Preheat the oven to 350 degrees F and lightly grease a 5 1/2 by 9-inch baking pan.
  • Remove the dough from the bowl and invert onto a lightly floured surface. Gently knead the dough several times. Tuck and roll so that any seams disappear into the dough and place in the prepared baking pan. Cover with plastic wrap and set aside in a warm, draft-free place until it doubles in size, about 1 hour. Use a pastry brush to brush the egg lightly over the top of the dough.   • Shape 1 dough half into an 8 1/2-inch-long rectangle (about 1/2 inch thick). Fold long sides of dough in to middle, overlapping slightly. Press seam to seal. Transfer dough, seam side down, to pan. Repeat with remaining dough. Brush tops of loaves with egg wash (beaten egg white mixed with water), and sprinkle with caraway seeds. Preheat oven to 450 degrees. Drape loaves with plastic. Let stand until dough rises about 1 inch above tops of pans, 45 minutes to 1 hour. Reduce oven temperature to 400 degrees. 1 ½ cups warm water
1 ½ cups warm milk
1 tablespoon salt
6 cups bread flour
¼ cup molasses
1 cup packed brown sugar
⅓ cup melted shortening
3 cups rye flour

Steps:

  • Dissolve yeast in warm water.
  • Scald milk. Transfer milk to a large bowl, and add salt, molasses, brown sugar, and melted shortening. Cool to lukewarm, and add dissolved yeast. Add rye flour, beating with mixer. Gradually beat in white flour. Place dough in a greased bowl, and turn to coat the surface. Cover with a damp towel, and allow to rise till double in bulk in a warm place.
  • Punch down the dough, and place on a lightly floured board. Knead until dough becomes elastic, and does not stick to the board. Allow to rest for 5 minutes. Divide into 3 equal portions, and shape into loaves. Place in greased 9 x 5 inch bread pans. Let rise until double in bulk.
  • Bake at 375 degrees F (190 degrees C) for 35 to 40 minutes.

2 to 2 1/2 cups Gold Medal™ Better for Bread™ flour or Gold Medal™ all-purpose flour
1/3 cup Betty Crocker™ mashed potatoes
2 tablespoons packed brown sugar
1 teaspoon salt
3/4 teaspoon caraway seed
1 package regular active or fast-acting dry yeast
1 cup buttermilk
1/2 cup water
2 tablespoons vegetable oil
1 1/2 cups rye flour
Cornmeal
Additional caraway seed, if desired

Steps:

  • In large bowl, mix 1 1/2 cups of the all-purpose flour, the mashed potatoes (dry), brown sugar, salt, 3/4 teaspoon caraway seed and the yeast. In 1-quart saucepan, heat buttermilk, water and oil over medium heat, stirring frequently, until very warm (120°F to 130°F); stir into potato mixture until blended. Stir in rye flour and enough remaining all-purpose flour to make dough easy to handle.
  • Place dough on lightly floured surface; gently roll in flour to coat. Knead about 8 minutes or until smooth and springy. Grease large bowl with shortening or cooking spray. Place dough in bowl, turning dough to grease all sides. Cover; let rise in warm place about 1 hour or until dough has doubled in size. (If using fast-acting yeast, do not let rise 1 hour; cover and let rest on floured surface 10 minutes.)
  • Grease large cookie sheet with shortening or cooking spray; sprinkle with cornmeal. Roll dough into rope, about 3 inches thick and 25 inches long. Curl dough into coil shape; tuck ends under. Place on cookie sheet. Cover; let rise in warm place 30 to 45 minutes or until dough has doubled in size.

Traditional Cottage Loaf - Old Fashioned Rustic English Bread image

Just the shape of this traditional loaf of bread is reminiscent of ploughman's lunches and warm cottage kitchens! A delightfully shaped loaf of bread, which represents all that is rustic and rural in Britain, but especially England. This bread keeps well and makes lovely, if odd shaped sandwiches! Cut the loaf into wedges and serve with freshly churned butter and a hunk of mature Cheddar cheese, maybe with a pickled onion or two. Quintessential British bread at its best. This reminds me of baking days in my grandmothers' old cottage, sitting in her warm and cosy kitchen; she would have baked this in her wood burning Aga stove, as I sometimes do in the winter when my Godin wood burning stove is working. I often leave the first batch of dough to prove and rise overnight - leave it in a cool but NOT cold place, and then continue shaping and proving it next morning. We used to call this wooden spoon bread when we were little, as you push a wooden spoon down through the two loaves to stick them together before baking! Preparation time includes the proving of the dough - but NOT the overnight method!

500 g strong white bread flour
2 teaspoons salt
1 teaspoon caster sugar
2 teaspoons fast-rising active dry yeast or 1 ounce fresh yeast
325 ml tepid milk, and water mixed
1 egg
salt, for glaze

Steps:

  • Sift flour and salt into a bowl, stir in sugar and yeast. Make a well in the centre, stir in the tepid milk and water to make the dough. (If using fresh yeast - put the yeast in a jug with a little of the milk and water mixture, and allow it to dissolve and become frothy - mixing thoroughly, then add it to the flour.).
  • Tip the dough onto a lightly floured surface and knead for 10 to 15 minutes until smooth and elastic.
  • Put the dough in a large, clean, oiled bowl. Cover with oiled clingfilm and leave in a warm place until it has doubled in size.Then knead the dough for 1 minute and divide it into two-thirds and a third. Shape the pieces into rounds. Cover them and leave for 5 minutes.
  • Put the smaller round on top of the larger one. Push a floured wooden spoon (or your fingers) through the centre of both rounds, to join them together. Take a very sharp knife and make cuts all around the top round and the bottom round - see my photos. Put the cottage loaf on a lightly floured baking tray, cover and leave for about 45 minutes, or until it has doubled in size. Meanwhile preheat the oven to 220C/440F/Gas 7.
  • Beat the egg with a tablespoon of water and a pinch of salt. Brush the glaze over the cottage loaf and bake for about 35 to 45 minutes, until dark golden brown and hollow sounding when tapped beneath.
  • Cool before slicing. Delicious served with butter, jam, cheese, cold meats or make sandwiches or toast for picnics and breakfast!

  • Sprinkle yeast into ½ cup of the very warm water; stir in 1 tsp of the molasses. Stir until yeast dissolves. Let stand, undisturbed, to proof until bubbly and double in volume, about 10 minutes. Combine remaining water and molasses with salt and shortening in a large bowl; stir in yeast mixture, rye flour and caraway seeds; add enough all-purpose flour to make a soft dough. Turn out onto lightly floured surface. Knead until smooth and elastic, about 10 minutes, using enough of the remaining flour to keep dough from sticking. Place in buttered large bowl; turn dough to bring buttered side up. Cover with towel. Let rise in a warm place, away from draft, 1hour, or until double in bulk. Butter large cookie sheet. Sprinkle lightly with cornmeal. Punch dough down; turn out onto lightly floured surface; knead a few times; invert bowl over dough; let rise 10 minutes. Divide dough in half and knead each half a few times. Shape into 2 loaves. Place at least 4 inches apart on prepared cookie sheet. Let rise again in a warm place, away from draft, 45 minutes, or until double in bulk. Brush tops with water. Bake in 400˚ oven for 35 minutes or until browned and loaves sound hollow when tapped. Steps:

  • Put 2 cubes of brown sugar each in 2 Old Fashioned glasses. Add an ice cube and 2 ounces of rye whiskey and stir until the sugar cubes dissolve. Top each with a lemon twist and a few dashes of bitters. Serve immediately.

OLD MILWAUKEE RYE

I think Bernard Clayton would love to have this recipe tried more. I made 2 round loaves out of this, but I'm sure you could shape it to suit your needs. Also, this is a three day 'sour' or 'sponge', but the only maintenance is a daily stir. I used a food processor, and learned that it wasn't recommended for a reason (!), so I'll just post the 'by hand' way. I just wanted to add a thanks to those that tried and loved this recipe, and decided to review it and add pictures. Thank you, and I'm glad you derived as much pleasure out of it as I did.

2 cups medium rye flour
2 1/4 teaspoons dried yeast
1 tablespoon caraway seed
1 1/2 cups warm water (105-115F)
1 cup hot water (120-130F)
1/4 cup dark molasses (not blackstrap)
2 tablespoons caraway seeds
1 egg, room temp
1 tablespoon salt
2 cups rye flour
4 cups all-purpose flour or 4 cups bread flour
3 tablespoons vegetable shortening
1 egg, beaten with
1 tablespoon milk, as wash

Steps:

  • Prep:.
  • To make the sponge, blend all ingredients of the Sponge above and stir 25 times with a wooden spoon. Cover tightly with plastic wrap to prevent moisture loss. It will rise and fall over the course of 3 days. Stir each day. Watch and smell the magic!
  • This can be used as little as 6 hours after mixing, but I went the full three days with wonderful results.
  • On the day you're baking, uncover and add the water, molasses, 1 tbsp caraway, egg, salt,rye flour, and about 2 cups of the white flour. Beat until smooth, about 100 strokes and add the shortening.
  • Add the remainder of the flour, 1/2 cup at a time and stir or mix by hand until the dough is somewhat sticky still.
  • Kneading:.
  • Turn the dough out on a floured work surface and knead by hand with a strong push, turn and fold method for 8-10 minutes. Use a dough scraper to help and add sprinkles of flour to control stickiness.
  • First Rise:.
  • Place dough in a greased bowl and cover with wrap again. Leave at room temp until doubled, about an hour.
  • Punch down and let rise an additional 10 minutes.
  • Shaping:.
  • I shaped mine into 2 round loaves as I mentioned, but I'm sure this could be panned or shaped how you'd prefer.
  • Second Rise:.
  • Cover loaves and let them double, about 40 minutes.
  • Preheat oven to 375F 20 minutes before baking.
  • Baking:.
  • Rye loaves should be cut on top. Diagonally for long loaves, or tic tac toe for rounds, but it's up to you.
  • Brush tops with the egg/milk mixture and sprinkle with the last tbsp of the caraway seeds.
  • Bake for 40 minutes until they pass the thump test or until they're done by your method of testing.
  • Cool on metal racks.
  • Keeps for a week in a plastic bag, or you can freeze it for months!
