3/4 cup confectioners' sugar
1/2 cup creamy peanut butter
2/3 cup sugar
3 tablespoons cornstarch
2 tablespoons all-purpose flour
Dash salt
3 cups 2% milk
3 egg yolks
2 tablespoons butter
1 teaspoon vanilla extract
MERINGUE:
3 egg whites
Dash cream of tartar
1/4 cup sugar

Steps:

  • Roll out pastry to fit a 9-in. pie plate. Transfer pastry to pie plate. Trim pastry to 1/2 in. beyond edge of plate; flute edges. Line unpricked pastry with a double thickness of heavy-duty foil. Fill with dried beans, uncooked rice or pie weights., Bake at 450° for 8 minutes. Remove foil and weights; bake 5-7 minutes longer or until lightly browned. 1 cup peanut butter
⅓ cup water
1 tablespoon cornstarch
1 tablespoon white sugar
4 egg whites, room temperature

1-1/2 cups light corn syrup
1/2 cup sugar

My aunt has made this pie each holiday for as long as I can remember. It's rich and has a taste that will leave you wanting more and more. After you get the pie crust baked, you can have it chilling in about 15 minutes. Try it! You won't regret it! Prep time does not include baking time for crust.

1 pie crust, frozen pet ritz deep dish, baked
1 cup powdered sugar
1/2 cup creamy peanut butter
2/3 cup sugar
1/4 cup cornstarch
1/4 teaspoon salt (can be omitted)
2 cups milk
3 large eggs, seperated
2 tablespoons margarine
1/2 teaspoon vanilla
1/4 teaspoon cream of tartar

Steps:

  • Combine powdered sugar and peanut butter;
  • Mix until mixture resembles coarse meal.
  • Spread most of the mixture (3/4 of it) in the baked pastry shell along the bottom and sides of shell.
  • Set remainder aside.

(Cook time is on the generous side and includes time to make homemade crust; cook time includes time to make filling;both are estimates)

1 9 inch pie shell, baked
1 cup powdered sugar
1/2 cup peanut butter
1/4 cup cornstarch

2 egg yolks, beaten (save the whites for meringue)
2 tablespoons butter
1/4 teaspoon vanilla
3 egg whites (use two mentioned above, plus one more egg white)

I created this recipe from my memory of the best Peanut Butter Pie ever from the Steak House Restaurant in Catlettsburg, Ky. I've tried many Peanut Butter Pie recipes but love this best of all. My children and grandchildren can't wait for the holidays for this treat! It's creamy and taste tantalizing, with a little texture form the peanut butter crumble. The layering creates several different taste sensations with each bite.

- pie shell, baked
- vanilla pie filling
- creamy peanut butter
- confectioners' sugar
- meringue

Steps:

  • Prepare single pie crust, place in pie dish or pan, prick crust with fork and lightly brown in 350 degree oven. Set on wire pie rack to cool.
  • Prepare Vanilla Pudding, either boxed or from scratch, as you prefer, according to directions. Set aside to cool. In separate bowl, use a fork to mix 1/2 cup of creamy peanut butter with 1 cup of confectioner sugar to make a chunky crumble. Sprinkle crumble over bottom of pie shell, reserving abt. 4 TBSP. Pour completely cooled pudding over this layer and sprinkle top of pudding with 2 TBSP. of the crumble, reserving finer crumble for topping. Top pudding with your favorite meringue or with a whipped cream topping and sprinkle remaining crumble over topping. Lightly toast meringue under oven broiler. Cool in refrigerator for at least two hours before serving.
