4 Tbsp olive oil
1/2 lb baby (pearl) onions, fresh (or 1/2 frozen bag, thawed)
1 medium red onion, sliced thin
1 medium Vidalia onion (or other sweet onion), sliced thin
6 cups (48 fl oz) chicken stock
Salt (to taste)
1/4 tsp red pepper flakes
1/2 lb angel hair pasta, broken in 2-inch pieces
1/4 cup chopped flat leaf parsley
4 tsp grated Romano cheese

Steps:

  • PLACE oil and all onions in a large sauce pan over low heat and saute, stirring occasionally, about 20 minutes, until onions are golden. Add stock and salt to taste. Sprinkle with red pepper flakes and simmer for about 1 hour. ADD pasta and parsley and cook until pasta is just al dente. LADLE into soup bowls. Sprinkle with grated Romano cheese

This recipe was originally given to me by a French housewife on the Island of Crete in Greece many years ago. Over the years I have adapted/perfected it to fit my guests and my tastes. It is a hearty soup and can be used as a first course or a complete dinner on a cool fall or winter night.

3 large onions, thinly sliced
6 green onions, thinly sliced
3 leeks, white part only,thinly sliced
6 cloves garlic, chopped
8 cups beef broth or 8 cups chicken broth (or a combination)
8 slices French bread
6 ounces swiss cheese, grated divided
4 tablespoons olive oil
2 tablespoons flour
1/2 teaspoon ground nutmeg
1 cup red wine (optional)

Steps:

  • Add oil to dutch oven and heat.
  • Add onion, green onions and leeks and saute until translucent.
  • Mix in flour to make a roux and saute until mixture just starts to turn golden.
  • Add broth, wine (if used) and nutmeg.
  • At this point taste the broth for flavor and seasoning. If the broth used does not meet your expectations, add a chicken or beef bullion cube or 1/2 teaspoon of chicken or beef base.
  • Taste the broth again and make adjustments until you are satisfied with the intensity of flavor and the seasoning.
  • Stir and simmer on low heat for 25 minutes
  • Spoon into bowls that can be placed under the broiler, top with french bread and cheese.
  • Place bowls in the broiler and broil until cheese melts and is bubbly.

Delicious Angel Hair in Tomato, Tuna and Olive Sauce image

You'll love this blend of tomatoes, tuna and black olives in a homemade tomato sauce. My mom would make this during Lent for the family, but you'll want to make it all year round. My husband (who hates tuna), raves about this dish. It's different and very delicious. Tastes even better heated the next day. Serve with some garlic bread and a salad and you have a complete dinner.

2 ½ tablespoons olive oil
¾ cup chopped onion
2 cloves garlic, chopped
1 (5 ounce) can solid white tuna packed in water, drained
1 (14.5 ounce) can whole peeled tomatoes, chopped
1 (4.25 ounce) can black olives, drained and halved
½ teaspoon dried basil
¼ teaspoon dried oregano
freshly ground black pepper to taste
1 (28 ounce) can tomato puree
1 (16 ounce) package uncooked angel hair pasta
½ cup grated Parmesan cheese for topping

Steps:

  • Heat olive oil in a skillet over medium heat. Stir in onion and garlic, and cook until tender. Mix in tuna and peeled tomatoes; cook until heated through. Mix in olives. Season with basil, oregano and pepper. Cook and stir 5 minutes. Stir in tomato puree. Cover, reduce heat to low and simmer 30 minutes, stirring occasionally.
  • Bring a large pot of lightly salted water to a boil. Place angel hair pasta in pot and cook 4 minutes, or until al dente. Serve topped with the sauce and sprinkled with Parmesan cheese.
