Time 1h50m

Yield 4 serving(s)

Number Of Ingredients 12

1 1/2 lbs roma tomatoes, cored and cut
20 medium fresh basil leaves, stems removed
2 tablespoons extra virgin olive oil
1 tablespoon garlic, minced
1 teaspoon italian seasoning
4 tablespoons butter
1/2 cup white wine
1 1/2 cups whole milk
1 cup parmesan cheese, grated
1 lb angel hair pasta, cooked
2 cups mozzarella cheese
1 1/2 lbs shrimp

Steps:

  • Combine tomatoes, basil, olive oil, garlic, Italian seasoning and salt in a large bowl and blend thoroughly. Cover, set aside and marinate for at least 1 hour.
  • Heat a large, nonstick skillet over medium heat. Add butter and let melt. Stir in white wine and bring to a boil. Add heavy cream and Parmesan cheese and bring to a simmer. Let sauce reduce to desired consistency.
  • Add cooked, drained pasta and marinated tomatoes to skillet. Stir to thoroughly coat pasta with sauce.
  • Transfer pasta and sauce to serving platter and top with mozzarella cheese.
  • Grill or sauté shrimp until internal temperature reaches 150°F and set aside.
  • Place serving platter in broiler for 2-3 minutes, or until cheese has melted.
  • Top pasta with cooked shrimp and serve.

Tips:

  • Use fresh, ripe tomatoes for the best flavor. If tomatoes are not in season, you can use a high-quality canned or jarred variety.
  • Choose a good quality balsamic vinegar. A cheap balsamic vinegar will have a harsh, acidic taste, while a good quality balsamic vinegar will be smooth and mellow.
  • Toast the bread before assembling the bruschetta. This will help it to hold up better and prevent it from getting soggy.
  • Don't overload the bruschetta with toppings. Too many toppings will make it difficult to eat and will overpower the flavor of the tomatoes.
  • Serve the bruschetta immediately after it is made. This will prevent the bread from getting soggy.

Conclusion:

Olive Garden's Bruschetta Caprese is a delicious and easy-to-make appetizer that is perfect for any occasion. It is made with fresh tomatoes, mozzarella cheese, basil, and balsamic vinegar. The bruschetta is then toasted and served immediately. This recipe is a great way to use up fresh tomatoes and it is also a healthy and refreshing dish. If you are looking for a quick and easy appetizer that is sure to impress your guests, then this is the recipe for you.
