1/2 cup flour
salt, to taste
pepper, to taste
dried oregano, to taste
4 tablespoons oil
4 tablespoons butter or 4 tablespoons margarine
2 cups fresh mushrooms, sliced
1 cup marsala wine

Steps:

  • POUND chicken breasts between sheets of plastic wrap until about 1/4-inch thickness.
  • COMBINE flour, salt, pepper and oregano in a mixing bowl. Dredge chicken pieces in the flour, shaking off any excess.
  • HEAT oil and butter in a skillet over medium heat. Cook chicken breast on medium heat for about 2 minutes on the first side, until lightly browned. Turn breasts over to cook the other side, then add mushrooms. Add Marsala wine around chicken pieces (CAUTION: a small flame will appear upon adding).
  • COVER and simmer for about 15 minutes.

1/2 cup flour
salt & freshly ground black pepper, to taste
2 teaspoons dried oregano
4 tablespoons olive oil
2 tablespoons butter or 2 tablespoons margarine
2 cups fresh mushrooms, sliced
1 cup marsala wine

Steps:

  • Using sheets of plastic wrap, pound the chicken breasts until about 1/4" thickness.
  • In a mixing bowl, combine flour, salt, pepper and oregano. Dredge chicken pieces in the flour, shaking off any excess.
  • In a skillet, combine olive oil and butter over medium heat until butter is incorporated into the oil. Cook chicken breasts on medium heat for about 2 minutes on the first side, until lightly browned.

1/2 cup smoked provolone or gouda cheese, shredded
8 ounces mozzarella cheese, shredded
1/4 cup Parmesan cheese, grated
1/2 cup breadcrumbs
1 teaspoon fresh garlic, minced
1/4 teaspoon red pepper flakes, crushed
2 tablespoon sun-dried tomato flakes (drain first, if in oil)
1/3 cup green onions, thinly sliced
3/4 cup sour cream
1/2 teaspoon salt
1/2 teaspoon black pepper
SAUCE:
1 small onion, cut in half and thinly sliced lengthwise
24 ounces Marsala wine
8 ounces heavy cream
6 cups button mushrooms, thinly sliced
Salt and pepper, to taste
2 pounds chicken breasts, skinless, boneless
4 ounces olive oil
2 cups all-purpose flour

  • Preheat the oven to 350°F. In a mixing bowl, combine all of the ingredients for the cheese stuffing. Use a kitchen knife to make a butterfly cut through the thickest part of the chicken breasts, creating two halves that are connected in the middle.
