This is a recipe I came up with myself. It is great with most Italian dishes. It can be doubled as needed.

½ cup butter, melted
1 teaspoon garlic salt
¼ teaspoon dried rosemary
⅛ teaspoon dried basil
⅛ teaspoon dried thyme
⅛ teaspoon garlic powder
1 tablespoon grated Parmesan cheese
1 (1 pound) loaf French bread, halved lengthwise

Steps:

  • Preheat oven to 300 degrees F (150 degrees C).
  • In a small bowl, mix butter, garlic salt, rosemary, basil, thyme, garlic powder and Parmesan cheese.
  • Spread each half of the French bread with equal portions of the butter mixture. Sprinkle with additional Parmesan cheese, if desired.
  • Place bread halves, crusts down, on a medium baking sheet. Bake in the preheated oven 10 to 12 minutes, or until the edges are very lightly browned.

This is my own creation on garlic bread because I was tired of recipe's that had too much butter on them and were not quite as healthy. With the seasonings and Parmesan cheese you don't even miss the butter and in fact, I have people rave about this bread all the time! In a pinch I will use the Pepperidge farm "Hot N Crusty Bread" but prefer to get straight from a bakery fresh bread either French baguette or a Rustic Italian.

1 loaf Italian bread or 1 loaf French bread
1/3-1/2 cup extra virgin olive oil
1/4 teaspoon salt (to taste)
1 teaspoon oregano
1/2 teaspoon basil
1/2 teaspoon Emeril's Original Essence
1/4-1/2 teaspoon garlic powder
2 teaspoons minced garlic
1/4 cup parmesan cheese (Lowfat if that's your desire)

Steps:

  • Split loaf lengthwise with a serrated knife AND PREHEAT OVEN to 425 degrees.
  • Brush both halves with olive oil till well coated.
  • Sprinkle with salt.
  • Sprinkle with garlic powder.
  • Sprinkle with the rest of the seasonings.
  • Spread 1 tsp of minced garlic per half of loaf.
  • Finally sprinkle both halves with Parmesan and bake for 10-15 minutes until bread is fragrant and the edges are starting to lightly brown.
  • Cool slightly, Cut and serve! Bon Appetito.

12 tablespoons (1 1/2 sticks) unsalted butter
1 head garlic, cloves separated and peeled
1 cup freshly grated Italian Parmesan cheese
2 tablespoons minced fresh parsley
2 teaspoons grated lemon zest
1/4 teaspoon crushed red pepper flakes
Kosher salt and freshly ground black pepper
1 (20 to 24-inch-long) crusty French baguette
Fleur de sel or sea salt

Steps:

  • Preheat the oven to 450 degrees F. (Make sure your oven is clean or it will smoke!)
  • Melt the butter in a small saucepan over low heat. Add the garlic, stir to coat with the butter, and cook, covered, for 20 minutes, stirring occasionally, until the garlic is very tender. Transfer to a small bowl and set aside until cool enough to handle. Mash the garlic in the butter with a fork. Stir in the Parmesan, parsley, lemon zest, red pepper flakes, 1 1/2 teaspoons kosher salt, and 1/2 teaspoon black pepper.
  • Slice the baguette in half lengthwise and place both halves, cut sides up, on a cutting board. Score each half diagonally (don't cut all the way through) in large serving-size pieces. Spoon all of the garlic mixture generously on the cut sides of the bread. Cut each half of the baguette in half crosswise along a score and place the 4 pieces on a sheet pan lined with parchment paper.
  • Bake for 5 to 7 minutes, until the topping is bubbly and starting to brown and the bread is crisp. Transfer to a board, cut in serving pieces along the scores, sprinkle with fleur de sel, and serve warm.
