2 teaspoons Kosher salt
1 ½ cups uncooked white rice
1 clove garlic, minced
2 cups low-sodium chicken broth
1 ¾ cups milk
freshly ground black pepper
1 pound boneless, skinless chicken breasts, cut in bite-size pieces
1 cup fresh or frozen peas
1 ½ cups shredded sharp Cheddar cheese

Steps:

  • Melt butter in a large heavy-bottomed pot or Dutch oven over medium heat. Add onion, thyme, and 1/2 teaspoon salt, and cook, stirring occasionally, until the onion is soft and translucent, about 8 minutes. Add rice and garlic. 1 (2 ounce) package dry onion soup mix
1 (10 3/4 ounce) can cream of mushroom soup
1 cup water
