3 russet potatoes, cut into bite-size pieces
1 red bell pepper, diced
1 small white onion, diced
olive oil, to taste
1 tablespoon dried rosemary
1 tablespoon garlic, minced
1 teaspoon paprika
1 teaspoon salt
1 teaspoon pepper

Steps:

  • Preheat oven to 500˚F (260˚C).
  • Dice potato, red bell pepper, and onion. Place on a baking sheet.
  • Drizzle olive oil over everything and season with rosemary, garlic, paprika, salt, and pepper. Mix until evenly coated and spread into an even layer.

3 potatoes, peeled
6 ounces bacon, chopped
½ cup chopped onion
½ cup chopped green bell pepper
1 teaspoon chopped garlic
1 cup chopped fresh tomatoes
salt and pepper to taste
6 ounces Cheddar cheese, shredded
8 eggs

Steps:

  • Bring a pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 15 minutes. Drain, cool and chop.
  • Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Add the onions, peppers, garlic, tomatoes, and potatoes. Season with salt and pepper and cook until vegetables are soft, about 5 minutes.

1 pound bulk pork sausage
4 large potatoes, peeled, cooked and cubed
1 large onion, chopped
6 large eggs, beaten
6 slices process American cheese

This is an easy recipe,because all you need is in your refrigerator.My husband works outside a lot,and wants something quick to eat, when he comes in for dinner. I have made this,( all in one pan breakfast)when camping. If Made ahead of time, its even quicker to cook the next day. Enjoy!

half tsp liquid smoke concentrated hickory seasoning by wright's
half tsp brown sugar
half c green bell pepper
half c onions
3 c chopped potatoes
1 lb bacon hardwood smoked
4-5 large eggs

Steps:

  • 1. Mix Liquid smoke and brown sugar together,put mixture in pan with bacon, cook together until done.Remove bacon from pan, set aside. Save bacon drippings.
  • 2. Cook onions, and pepper with 1/2 the dripping 5-8mins remove from pan set aside,add remaining drippings and cook potatoes until soft.Return onions and pepper to potatoes. Cook 10mins more.
  • 3. Push potatoes to the edges of pan, into the center crack your eggs and cook them any way you wish. I find it easier to just crack the eggs in the pan, and when your eggs are done , its time to eat. Then sprinkle the top with bacon. If you like cheese sprinkle a little on top before serving. I use sharp cheddar!
