20 ounces of refrigerated tortellini
1 tablespoon olive oil
2 tablespoons butter
2 tablespoons flour
2 1/2 cups chicken broth
1/2 cup heavy cream
1/4 cup grated parmesan cheese
1 1/2 cups fresh spinach
1 cup cherry tomatoes (halved)
salt and pepper to taste
2 tablespoons chopped parsley

Steps:

  • Heat the olive oil in a large pan over medium-high heat.
  • Add the chicken to the pan and season to taste with salt and pepper.
  • Cook, stirring occasionally, until chicken is browned and just cooked through, 4-5 minutes.
  • Remove the chicken from the pan; cover with foil to keep warm.

1/2 cup heavy whipping cream
1 package (20 oz) refrigerated cheese tortellini
2 cups chopped cooked chicken
1 package (10 oz) fresh broccoli florets (about 4 cups)
4 oz (half of 8-oz package) cream cheese, cut into cubes and softened
Shredded Parmesan cheese, if desired
