2 celery stalks, sliced 1/4 inch thick on the diagonal

8 ounces dried wide egg noodles
1 1/2 cups shredded cooked chicken

1 whole free-range chicken (about 3 1/2 pounds), rinsed, giblets discarded
2 carrots, cut in large chunks

  • Place a soup pot over medium heat and coat with the oil. Add the onion, garlic, carrots, celery, thyme and bay leaf. 1 (4 pound) whole chicken - trimmed, giblets removed, and patted dry
8 cups chicken broth

1 (8 ounce) package egg noodles
1 teaspoon kosher salt
