1 tablespoon butter
1 medium onion, chopped
1 (6 1/2 ounce) can sliced mushrooms, drained, chopped
1/2 lb cooked bacon, diced
1 -2 cup colby & monterey jack cheese, shredded
6 eggs, beaten
1 cup milk
1/8 teaspoon ground nutmeg

Steps:

  • Preheat oven to 400° F degrees.
  • Melt the butter in a heavy nonstick skillet over medium high heat.
  • Saute onions and mushrooms for 5 minutes, or until tender, remove from heat and allow to cool slightly.
  • Wisk the eggs, milk and nutmeg in another bowl. Add cheese and stir to combine.
  • Spray a deep dish pie pan with non-stick spray and pour egg and cheese mixture into dish and add diced bacon, onion and mushrooms.
  • Bake for 25-35 minutes or until center is set.

1/2 medium onion, diced
Mushroom stems, leftover from Bacon Stuffed Mushrooms recipe, chopped
5 eggs
1/2 cup milk
1 tablespoon freshly chopped parsley leaves
1 teaspoon freshly chopped thyme leaves
Salt and freshly ground black pepper
1/2 cup grated mozzarella cheese
1 frozen, pre-made pie shell in the foil pie plate

Steps:

  • Preheat the oven to 375 degrees F.
  • In a large skillet over medium heat, add the bacon and cook until crisp. Remove from pan and drain on a brown paper bag or paper towels and reserve the fat in the pan. Chop the bacon when cooled and reserve.
  • To the same skillet with reserved bacon fat, add the onions and mushroom stems and cook until the onions are translucent and the mushrooms are browned, about 5 minutes.
  • In a large bowl mix together the eggs, milk, herbs and salt and pepper, to taste. Stir in the cheese, the reserved bacon and the mushroom mixture.
  • Pour the filling into the pie crust. Put on a baking sheet and bake until the quiche has set and top and crust has browned, about 30 to 35 minutes.

Steps:

  • Preheat oven to 200C/fan 180C
  • Make the pastry by rubbing the butter into the flour to resemble breadcrumbs. Stir in about 8 tbsp of fridge cold water and bring together to a ball using your hands.
  • Chill in the fridge for 10 minutes.
  • While the pastry is chilling finely slice the onions and place in a pan with some butter or oil and gently soften and allow to caramalise, will take about 20 minutes. Set aside to cool.
  • Take the pastry from the fridge, roll out on a lightly floured surface and line a large greased tart case. Prick with a fork and lay over a sheet of greaseproof paper or foil and cover with baking beans or rice and cook in the centre of the oven for 20 minutes.
  • While this is cooking cut the bacon into smallish pieces and fry in a pan with a little oil until cooked and crisp, then add to the onions. In the same pan add the sliced mushrooms and fry slightly to crisp up then cook down until fully cooked with a little butter, worcetser sauce, a thyme sprig and seasoning. Once cooked add to the bacon and onions and sprinkle in half the chopped parsley.
  • In a jug mix together the eggs, creme fraiche, a little seasoning and the rest of the parsley.
  • After the 20 minutes is up, remove the pastry case form the oven and take out the greaseproof paper and baking beans or rice. Put back into the oven for a furthur 15 minutes or until the pastry browns slightly and is cooked.
  • Once browned remove from the oven and fill the pastry case with the onion, bacon and mushroom mixture and pour over the egg mixture. Place back in the centre of the oven for around 30 minutes or until the filling is nearly set as it will finish cooking as it cools slightly. Once out of the oven let it stand to set for 5 minutes and serve warm in slices with salad and home made chips or roasted potatoes.

25g butter
2 large onions, halved and thinly sliced
1 tbsp fresh thyme leaves, plus a few sprigs
350g shop-bought shortcrust pastry
plain flour, for dusting
200g pack smoked bacon lardons
300g pot double cream
100ml milk
3 large eggs
2-3 pinches of nutmeg, plus extra for the top
140g mature cheddar, grated

Steps:

  • Melt the butter in a large non-stick frying pan, add the onions and cook for 20 mins, stirring now and then, until they are soft and golden brown. Season, stir in the thyme leaves, then transfer to a plate to cool.
  • Heat oven to 200C/180C fan/gas 6 with a large baking sheet inside. Roll out the pastry on a lightly floured surface until large enough to line a 25cm loose-bottomed tart tin, with a little overhang of pastry all the way round the top. This will stop the pastry shrinking in the oven later. If there is more overhang than you need, trim off the excess with scissors. Gently press the pastry into the sides of the tin and prick the base with a fork. Chill for 15 mins.
  • Line the pastry case with a sheet of baking parchment and fill with ceramic baking beans. Bake for 15 mins on the hot baking sheet (this helps to prevent a soggy bottom). Carefully remove the parchment and beans, then return to the oven for 10 mins more until the pastry looks cooked like shortbread, but is not too brown.
  • Meanwhile, put the bacon in the pan you cooked the onions in (there's no need to wash it first or add any oil) and fry for 10 mins until golden. Lift from the pan onto kitchen paper to remove any excess fat. Beat the cream, milk and eggs with seasoning and nutmeg, then stir in the bacon and half the cheese.
  • Remove the pastry case from the oven and reduce heat to 190C/170C fan/gas 5. Spoon the caramelised onions evenly over the base of the pastry case. Pour in the bacon mixture, then scatter with the remaining cheese, the thyme sprigs and a little nutmeg. Bake for 25-30 mins until golden and the filling is just set with a slight wobble in the centre.
  • Trim the excess pastry and leave to settle for 10 mins, then remove from the tin and slice.

¼ cup butter
