¼ cup vegetable oil
½ cup white sugar
4 cups onion, coarsely chopped
¼ teaspoon salt
ground black pepper to taste
½ cup red wine vinegar

Steps:

  • Heat vegetable oil in a heavy skillet over medium heat.
  • Stir sugar into vegetable oil with a wooden spoon, stirring constantly until mixture is a light caramel-color, about 10 minutes. Mixture will be very hot.

1/4 cup vegetable or canola oil
4 large red onions, halved, peeled, and cut into thin (1/4-inch) slices
Kosher salt and freshly ground black pepper
2 cups dry red wine
1/2 cup honey
1/2 cup red wine vinegar
Juice and a few grates of zest from 1 lemon, optional

Steps:

  • In a medium saute pan, heat the oil until it begins to smoke lightly. Add the onions and season with salt and pepper, to taste. Cook until the onions give up their liquid, 3 to 5 minutes, and then add the red wine. Lower the heat and cook the onions until the wine reduces almost completely. Leave on low heat while you prepare the gastrique.
  • In a separate small pan, heat the honey until it begins to bubble and froth. Cook until the honey turns a light caramel color, an additional 2 to 3 minutes. Add the red wine vinegar, simmer for a few minutes on low heat, and then shut off the heat. Pour the honey mixture over the onions and continue cooking them over low heat until all of the juice is absorbed and the onions are a jam-like consistency, 10 to 15 minutes. If you desire, add lemon juice and zest at this point. Taste for seasoning and transfer to a bowl to cool until ready to serve.

4 whole garlic bulbs
1 teaspoon canola oil
5 cups chopped sweet onions (1-1/2 pounds)
1/4 cup butter, cubed
3/4 cup cider vinegar
1/2 cup bottled lemon juice
1/4 cup balsamic vinegar
1-1/2 teaspoons ground mustard
1 teaspoon salt
3/4 teaspoon white pepper
1/2 teaspoon ground ginger
1/4 teaspoon ground cloves
6 cups sugar
1 pouch (3 ounces) liquid fruit pectin

Steps:

  • Remove papery outer skin from garlic (do not peel or separate cloves). Cut top off garlic bulbs; brush with oil. Wrap each bulb in heavy-duty foil. Bake at 425° 30-35 minutes or until softened. Cool 10-15 minutes. , In a Dutch oven, saute onions in butter 30-40 minutes or until lightly browned. Squeeze softened garlic into pan. Stir in cider vinegar, lemon juice, balsamic vinegar, mustard, salt, pepper, ginger and cloves. Bring to a full rolling boil over high heat, stirring constantly. Gradually stir in sugar. 3 large Spanish onions
2 tablespoons sugar
2 tablespoons balsamic vinegar
Olive-oil cooking spray

Steps:

  • Cut onions in half lengthwise; peel. Cut off ends; cut lengthwise into 1/4-inch-thick pieces.
  • Coat a 13-inch skillet with cooking spray, and set over medium heat. Add onions, and cover. Cook, stirring occasionally, until softened and translucent, about 15 minutes.

  • Chop the red onions into slices
  • Melt the butter in a saucepan and add the sliced onion to the melted butter
  • Fry for a few minutes, then add the brown sugar and red wine vinegar
  • Stir and allow to simmer on a low heat for 20 minutes, stirring regularly to prevent the sugar from burning.

1 -2 tablespoon melted butter
3/4 cup apple cider vinegar
1/4 cup water
2 tablespoons brown sugar (or to taste)
1 teaspoon celery seed
1/4 teaspoon salt (or to taste)

Steps:

  • Saute onions, celery and red bell pepper in the butter in a Dutch oven for about 15 minutes or until tender (do not brown).
  • Add in vinegar and remaining ingredients to the mixture; bring to a boil, reduce heat and simmer uncovered for about 20 minutes.

1 1/2 lbs red onions, about 2 large
1 1/2 lbs yellow onions, about 2 large
4 bunches scallions (green part only)
3 tablespoons vegetable oil
1 1/2 cups balsamic vinegar
kosher salt, to taste
fresh ground black pepper, to taste
1/4 cup brown sugar

Steps:

  • Peel the onions and cut off the ends, then stand each onion on its bottom and slice it through the center, top to bottom.
  • Continue slicing to produce thin, semicircular julienne strips, then cut those into pieces 2 or 3 inches long.
  • Cut the scallions into pieces 2 or 3 inches long.
  • Heat the oil in a large skillet over medium heat.
  • Add the onions and scallions and sauté until they begin to soften; cover the pan, lower the heat, and cook until they are wilted, about 20 to 30 minutes.
  • Remove the lid, increase the heat, and add the vinegar.
  • Cook over medium heat, stirring occasionally, until the vinegar is reduced by half.
  • Stir in the salt and pepper, then gradually add the brown sugar, tasting as you go.
  • Onions have different amounts of natural sugar at different times of the year, so the amount of brown sugar may need to be adjusted. The final flavor should be strongly sweet-and-sour.
  • Continue cooking the mixture until the jam is thick, about 10 minutes.

3/4 pound onions, halved lengthwise and sliced very thin crosswise (about 4 cups)
2 tablespoons vegetable oil
2 teaspoons minced garlic
1 1/2 tablespoons minced peeled fresh gingerroot
1 teaspoon salt, or to taste
1/2 cup dry red wine
1/2 cup red-wine vinegar plus additional to taste
2 dried red hot peppers, each about 2 inches long, seeded and crumbled (wear rubber gloves)
1/2 pound pitted dates, chopped (about 1 1/2 cups)

Steps:

  • In a large heavy skillet cook the onions in the oil over moderately low heat, stirring, until they are softened, add the garlic, the gingerroot, and the salt, and cook the mixture, stirring, for 2 minutes. Add the wine, 1/2 cup of the vinegar, and the peppers and cook the mixture over moderately high heat, stirring occasionally, until most of the liquid is evaporated. In a food processor combine the onion mixture with the dates and pulse the motor 3 or 4 times. Add the additional vinegar and pulse the motor 2 or 3 times, or until the mixture is combined well but still chunky. The relish keeps, covered and chilled, for 1 week.
