Number Of Ingredients 9

3 cups all-purpose flour
3 tablespoons white sugar
3 teaspoons baking powder
1 ½ teaspoons baking soda
¾ teaspoon salt
3 cups buttermilk
½ cup milk
3 eggs
⅓ cup butter, melted

Steps:

  • In a large bowl, combine flour, sugar, baking powder, baking soda, and salt. In a separate bowl, beat together buttermilk, milk, eggs and melted butter. Keep the two mixtures separate until you are ready to cook.
  • Heat a lightly oiled griddle or frying pan over medium high heat. You can flick water across the surface and if it beads up and sizzles, it's ready!
  • Pour the wet mixture into the dry mixture, using a wooden spoon or fork to blend. Stir until it's just blended together. Do not over stir! Pour or scoop the batter onto the griddle, using approximately 1/2 cup for each pancake. Brown on both sides and serve hot.

ORANGE PANCAKES

Orange Pancakes image

Oh the things I was out of when I created this dish: no milk and no eggs, but we wanted pancakes, dangit! I used flax meal to make up for the protein in the egg (a vegan trick) and substituted orange juice for milk. The result was pancakes bursting with citrus flavor. It's a new favorite in our house! Serve with butter and/or maple syrup.

Tips:

  • Use fresh citrus: Fresh oranges provide the best flavor for these pancakes. If you don't have fresh oranges on hand, you can use 1/2 cup of orange juice concentrate thawed and diluted with 1/2 cup of water.
  • Don't overmix the batter: Overmixing the batter will make the pancakes tough. Mix just until the ingredients are combined.
  • Let the batter rest: Letting the batter rest for a few minutes before cooking allows the gluten to relax, which results in lighter, fluffier pancakes.
  • Cook the pancakes over medium heat: Cooking the pancakes over medium heat prevents them from burning on the outside before they're cooked through on the inside.
  • Serve the pancakes immediately: Pancakes are best served immediately after they're cooked. If you need to keep them warm, place them in a warm oven or on a baking sheet covered with foil.
