4 ounces reduced-fat cream cheese
1/2 cup confectioners' sugar
1/4 cup packed brown sugar
1 large egg yolk
2 teaspoons vanilla extract
1-1/2 cups all-purpose flour
FILLING:
1 cup packed brown sugar
3 large egg whites
1 large egg
3 tablespoons all-purpose flour
2 teaspoons vanilla extract
1/2 teaspoon orange extract
1/4 teaspoon salt
1-1/2 cups salted cashews, coarsely chopped
ICING:
3/4 cup confectioners' sugar
4 teaspoons orange juice
1 teaspoon grated orange zest

Steps:

  • Preheat oven to 350°. In a large bowl, beat cream cheese and sugars until smooth. Beat in egg yolk and vanilla. Gradually beat in flour., Press dough onto bottom and 1/4 in. up sides of a 13x9-in. baking pan coated with cooking spray. Bake 15-20 minutes or until edges are light brown. Cool 10 minutes on a wire rack., For filling, in a large bowl, beat brown sugar, egg whites, egg, flour, extracts and salt until smooth. Stir in cashews. Pour into crust. 2 sticks (1 cup) salted butter, cut into small cubes, plus more for buttering the pan
2 cups all-purpose flour
1/2 cup granulated sugar
1/4 teaspoon kosher salt
3/4 cup granulated sugar
1/4 cup all-purpose flour
4 large eggs
Zest and juice of 4 oranges (making about 1 cup of juice)
Powdered sugar, for sifting

Steps:

  • For the crust: Preheat the oven to 350 degrees F. Grease a 9-by-13-inch pan with butter.
  • Stir together the flour, granulated sugar and salt in a bowl. Add the butter to the bowl and use a pastry cutter to cut it all together until the mixture resembles fine crumbs. Press into the prepared pan and bake until golden around the edges, about 20 minutes.

1/4 cup light corn syrup
1/2 teaspoon coarse salt
1 1/2 teaspoons finely grated orange zest
3/4 teaspoon ground ginger
1/2 teaspoon ground coriander
1/2 teaspoon ground cumin
Pinch of cayenne pepper

Steps:

  • Preheat oven to 350 degrees. Line two baking sheets with parchment paper; set aside. In a medium bowl, mix cashews with corn syrup until evenly coated. Set aside.

1 dark chocolate candy bar (3-1/4 ounces), chopped
1 large egg, beaten
17 shortbread cookies, crushed
1/2 cup sweetened shredded coconut
1/2 cup finely chopped pecans
1 teaspoon grated orange zest
FILLING:
1/2 cup butter, softened
2 tablespoons instant vanilla pudding mix
2 cups confectioners' sugar
2 tablespoons orange juice
1 teaspoon grated orange zest
1 to 2 drops orange paste food coloring, optional
GLAZE:
1 dark chocolate candy bar (3-1/4 ounces), chopped
1 teaspoon butter

  • In a large heavy saucepan, combine the butter, sugar and candy bar. Cook and stir over medium-low heat until melted. Whisk a small amount of hot mixture into egg.
