1 cup uncooked long-grain rice
1 (8 ounce) can pineapple chunks, drained
1/4 cup dry-roasted cashews or 1/4 cup peanuts, chopped
1/3 cup raisins
3 green onions, thinly sliced
1 small red bell pepper, diced in 1/2 inch pieces
1 small green bell pepper, diced in 1/2 inch pieces
1 stalk celery, cut in half down lengthwise,and thinly sliced
1 cup fresh bean sprout
1/2 cup fresh orange juice
2 tablespoons low sodium soy sauce
2 teaspoons dark sesame oil
1 tablespoon peeled and minced fresh ginger
1 teaspoon grated fresh orange zest
1 clove garlic, minced
1/4 teaspoon red pepper flakes
1 tablespoon cilantro, minced

Steps:

  • Cook rice according to directions and place in a bowl to cool to room temperature.
  • When cool, add pineapple, cashews, raisins, green onions, red and green bell peppers, celery, bean sprouts and cilantro.
  • In a jar, combine dressing ingredients and shake to mix.

½ cup diced onion
1 cup uncooked long grain white rice
2 teaspoons ground cumin
½ teaspoon garlic powder
½ teaspoon onion powder
¼ teaspoon ground black pepper
⅛ teaspoon cayenne pepper
salt to taste
1 ½ cups orange juice
½ cup chicken broth
½ cup chopped fresh cilantro

Steps:

  • Melt the butter in a saucepan over medium-high heat. Stir in onion, and cook until tender. Mix in rice, and season with cumin, garlic powder, onion powder, pepper, cayenne pepper, and salt. Cook and stir until rice is golden brown. Pour in orange juice and broth, and bring to a boil. Reduce heat to low, cover and simmer 20 minutes.
  • Remove cooked rice from heat, and gently mix in cilantro to serve.

1/2 cup green onion, sliced
1 cup long grain rice
1 small orange, zest of
2 1/4 cups water
2 tablespoons fresh cilantro, chopped
salt and pepper

Steps:

  • Spray medium saucepan with cooking spray; heat over medium heat until hot.
  • Saute onions until tender, 3-5 minutes.
  • Add rice and orange zest to saucepan; cook over medium heat until rice is lightly browned, 2-3 minutes, stirring frequently.
