ORANGE CRANBERRY SAUCE

Orange Cranberry Sauce image

Cranberries are one of the few fruits native to the northeastern United States, growing wild in bogs and swamps. Cranberries have become a staple at holiday meals, especially Thanksgiving. This is my kicked-up version of cranberry sauce. Recipes by Emeril Lagasse, from "Farm to Fork," HarperStudio, New York, 2010, courtesy Martha Stewart Living Omnimedia, Inc.

Categories     Food & Cooking     Ingredients     Seafood Recipes

Yield 2 cups

Number Of Ingredients 7

1 bag (12 ounces) cranberries
Grated zest and juice of 2 oranges
1/4 cup ruby port
3/4 cup sugar, or more to taste
1/2 teaspoon ground cinnamon
1/2 teaspoon ground cardamom
1 cup toasted pecans or walnuts

Steps:

  • Combine the cranberries, orange zest and juice, port, sugar, cinnamon, and cardamom in a small saucepan, and bring to a boil. Reduce the heat to a simmer and cook, stirring occasionally, until the cranberries are tender and the sauce has thickened, about 10 minutes.
  • Taste, and add more sugar if desired. Stir in the nuts and set aside to cool. Serve at room temperature. (The sauce can be made up to 3 days in advance and stored in an airtight container in the refrigerator until ready to serve.)

Tips:

  • Use fresh cranberries. Fresh cranberries have a brighter flavor than frozen or dried cranberries. If you can't find fresh cranberries, you can substitute frozen or dried cranberries, but the flavor will be less intense.
  • Zest the orange before juicing it. The zest of an orange contains a lot of flavor, so it's important to zest the orange before juicing it. This will help to enhance the flavor of the orange cranberry dream.
  • Use a food processor to finely chop the cranberries. This will help to ensure that the cranberries are evenly distributed throughout the orange cranberry dream.
  • Chill the orange cranberry dream for at least 4 hours before serving. This will allow the flavors to meld together and the dream to firm up.
  • Serve the orange cranberry dream with whipped cream or ice cream. This will add a touch of sweetness and creaminess to the dessert.

Conclusion:

Orange cranberry dream is a delicious and refreshing dessert that is perfect for any occasion. It is easy to make and can be made ahead of time, making it a great option for busy families. The combination of orange and cranberry flavors is a classic, and the whipped cream or ice cream topping adds a touch of sweetness and creaminess. This dessert is sure to be a hit with everyone who tries it.
