Time 1h

Yield 8 serving(s)

Number Of Ingredients 9

4 small acorn squash
2 tablespoons butter
1 cup sugar (I used 1/2 cup)
1 cup orange juice
1/3 cup orange juice concentrate
1/4 cup salt (omitted)
1/4 teaspoon ground nutmeg
1/4 teaspoon grated orange peel
1/8 teaspoon pepper

Steps:

  • Cut squash in half; discard seeds. Place squash cut-side down in a 15-in x 10-in x 1-in baking pan; add 1/3 in of hot water. Bake, uncovered, at 350 degrees for 30 minutes.
  • Meanwhile, in a saucepan, melt butter over medium heat. Stir in the remaining ingredients. Bring to a boil. Reduce heat to medium-low; cook, uncovered, for 30 minutes or until syrupy, stirring occasionally.
  • Drain water from baking pan; turn squash cut side up. Pour about 2 T. orange glaze into each squash half. bake 25-30 minutes longer or until squash is tender.

Tips:

  • Choose the right squash: Look for acorn squash that are small to medium in size, with deep green skin and no blemishes.
  • Prepare the squash properly: Cut the squash in half lengthwise and scoop out the seeds. Drizzle the cut sides with olive oil and sprinkle with salt and pepper.
  • Roast the squash until tender: Place the squash cut-side up on a baking sheet and roast in a preheated oven at 400°F (200°C) for 30-40 minutes, or until the squash is tender when pierced with a fork.
  • Make the orange glaze: While the squash is roasting, make the orange glaze by combining orange juice, honey, butter, and spices in a saucepan. Bring to a simmer and cook for 5-7 minutes, or until the glaze has thickened.
  • Glaze the squash: Once the squash is roasted, brush the orange glaze over the cut sides. Return the squash to the oven and broil for 2-3 minutes, or until the glaze is bubbly and browned.
  • Serve immediately: Serve the glazed acorn squash warm, as a side dish or main course.
