This is a pretty, healthy salad that serves a lot of people. You may like more or less dressing, but err on the cautious side because too much will overwhelm the veggies. This doesn't keep for more than a day -- two at most.

ORANGE SALAD

Orange Salad image

You don't need salt to bring out the fantastic flavor of this zesty salad from our Test Kitchen. A dash of spices and minced cilantro add to its somewhat exotic appeal. TIP: To easily peel the oranges, cut off both ends and stand the orange upright on a cutting board. Cut downward in vertical strips following the curve of the orange to remove the peel.

Remove from fridge and break up the jello into chunks. Place in a large bowl. Add in the pineapple, mandarin oranges, and whipped cream and mix around until everything is combined. Tips:

  • Gently mix the salad: Toss the salad ingredients together gently to avoid bruising the delicate orange segments and softening the crunchy nuts.
  • Use ripe oranges: Ripe oranges will be sweeter and juicier, resulting in a more flavorful salad.
  • Make the dressing ahead of time: The dressing can be made several hours or even a day in advance, allowing the flavors to meld.
  • Serve immediately: Orange Jubilee Salad is best enjoyed immediately after it is made, as the oranges and dressing can lose their vibrancy over time.
