1 cup butter, softened
2 cups white sugar
4 eggs
½ cup buttermilk
1 teaspoon baking soda
3 ½ cups all-purpose flour
1 pound dates, pitted and chopped
1 pound orange slices candy, chopped
2 cups chopped pecans
1 ⅓ cups shredded coconut
1 cup orange juice
2 cups confectioners' sugar

Steps:

  • Preheat oven to 250 degrees F (120 degrees C). Lightly grease and flour one 10 inch tube pan.
  • In a mixing bowl, cream margarine and granulated sugar until smooth. Add eggs one at a time, beating well after each addition. Dissolve baking soda in buttermilk and add to the creamed mixture.
  • Place flour in a large bowl and add dates, orange slices, and nuts. Stir to coat each piece. Add flour mixture and coconut to creamed mixture. This makes a very stiff dough, so it will be necessary to stir with a wooden spoon.
  • Pour batter into the tube pan. Bake for 2 1/2 to 3 hours. As soon as cake comes from oven, combine the orange juice and confectioners sugar and pour over hot cake. Let stand in pan overnight.

1 cup butter
4 eggs
1 lb orange slice candy, cut up (3 cups)
1/2 cup all-purpose flour
2 cups sugar
3 cups all-purpose flour
1 cup buttermilk
1 (8 ounce) package pitted dates, cut up
1 (7 ounce) package flaked coconut
2 cups chopped nuts (I use pecans)
2 cups confectioners' sugar, sifted
1/2 cup orange juice

Steps:

  • Let butter and eggs come to room temperature.
  • Combein gumdrops and 1/2 cup flour.
  • Grease and flour 2 9x5-inch loaf pans.
  • Lay a strip of parchment paper inside so it covers the two long sides and bottom.
  • Set aside.
  • In large bowl, beat butter with mixer 30 seconds or until softened.
  • Gradually add sugar, beat until combined.
  • Add eggs one at a time, beating after each and scraping the bowl frequently.
  • Add the 3 cups flour and buttermilk alternately to egg mixture; beat after each addition.
  • Fold in dates, coconut and nuts.
  • Fold in gumdrops.
  • Spread batter evenly into prepared pans.
  • Bake at 300°F for about 1 hour and 40 minutes or until toothpick inserted in center comes out clean.

1 teaspoon plus 1 tablespoon butter, softened, divided
1 cup sugar
1 cup light corn syrup
3/4 cup water
1 package (1-3/4 ounces) powdered fruit pectin
1/2 teaspoon baking soda
1-1/2 teaspoons orange extract
1 teaspoon grated orange zest
4 drops yellow food coloring
1 drop red food coloring
Additional sugar, optional

Steps:

  • Line the bottom and sides of a 9x5-in. loaf pan with foil. Grease the foil with 1 teaspoon butter; set aside. , Grease the bottom and sides of a large heavy saucepan with the remaining butter; add sugar and corn syrup. Cook and stir over medium heat until mixture comes to a boil, about 9 minutes. Cook over medium-high heat until a candy thermometer reads 280° (soft-crack stage), stirring occasionally., Meanwhile, in another large saucepan, combine the water, pectin and baking soda (mixture will foam slightly). Cook and stir over high heat until mixture boils, about 2 minutes. Remove from the heat; set aside., When corn syrup mixture reaches 280° (soft-crack stage), remove from the heat. Cook and stir 1 minute longer., Remove from the heat; stir in the extract, zest and food coloring. Transfer to prepared pan. Let stand until firm, about 2 hours. Cut into squares. If desired, roll in additional sugar.
