1 tablespoon minced garlic (3 cloves)
1/2 teaspoon coarsely ground black pepper
Special Equipment
an 11- by 17-inch flameproof roasting pan

Steps:

  • Put oven rack in middle position and preheat oven to 325°F.
  • Sprinkle ribs evenly with salt.
  • Bring orange juice, soy sauce, sugar, ginger, garlic, and pepper to a boil in roasting pan over moderately high heat, stirring until sugar is dissolved. Add ribs in 1 layer using tongs, turning to coat, and cover pan tightly with foil.

  • Before serving:
  • Reduce oven temperature to 200°F.
  • Transfer ribs to a baking dish, arranging them in 1 layer, and keep warm in oven.
  • Skim fat from cooking liquid if desired, then make glaze by boiling liquid, uncovered, stirring occasionally, until syrupy and reduced to about 3/4 cup, about 15 minutes. Brush glaze generously on ribs.

Tips:

  • Select the Right Ribs: Choose high-quality pork ribs, preferably baby back or spare ribs, for the best flavor and texture.
  • Prepare the Ribs: Remove the membrane from the back of the ribs to ensure a tender and juicy result.
  • Create a Flavorful Marinade: Combine soy sauce, orange juice, garlic, ginger, and other spices to create a flavorful marinade that will infuse the ribs with deliciousness.
  • Marinate the Ribs: Allow the ribs to marinate for at least 2 hours, or up to overnight, to allow the flavors to penetrate deeply.
  • Slow-Cook the Ribs: Braising the ribs in a low oven or slow cooker allows the meat to become fall-off-the-bone tender while absorbing all the delicious flavors of the marinade.
  • Control the Heat: Maintain a low and steady cooking temperature to prevent the ribs from drying out or burning.
  • Glaze the Ribs: During the last 30 minutes of cooking, brush the ribs with a glaze made from honey, orange marmalade, and soy sauce to add a glossy finish and extra layer of flavor.
  • Rest the Ribs: Allow the ribs to rest for a few minutes before serving to allow the juices to redistribute, resulting in more tender and flavorful meat.

Conclusion:

Orange soy braised pork ribs is a delectable dish that combines the tangy sweetness of oranges with the savory richness of soy sauce. By following these tips and the detailed recipe, you can create fall-off-the-bone tender ribs that are bursting with flavor.
