2 cans (10 ounces each) salted cashews
3 tablespoons butter
1 tablespoon canola oil
1/2 teaspoon salt
1/2 teaspoon chili powder
1/4 to 1/2 teaspoon crushed red pepper flakes

Steps:

2 1/2 cups whole cashews
1/4 cup light corn syrup
1/2 teaspoon coarse salt
1 1/2 teaspoons finely grated orange zest
3/4 teaspoon ground ginger
1/2 teaspoon ground coriander
1/2 teaspoon ground cumin
Pinch of cayenne pepper

Steps:

  • Preheat oven to 350 degrees. Line two baking sheets with parchment paper; set aside. In a medium bowl, mix cashews with corn syrup until evenly coated. Set aside.

1 cup orange juice
2 teaspoons grated orange zest
1 tablespoon olive oil
salt, to taste
1 cup basmati rice
1/2 cup roasted cashew pieces
1/4 cup chopped yellow pepper
1/4 cup chopped red pepper
3 scallions, minced
1 teaspoon salt
fresh ground white pepper, to taste
8 ounces mandarin orange segments, drained well
