1/3 cup Demerara sugar such as Sugar in the Raw
1 tablespoon finely grated fresh orange zest (from 1 large orange)
1 large egg white
1/3 cup plus 1 tablespoon all-purpose flour

  • Preheat oven to 325°F.
  • Pipe or drop 1/2-teaspoon mounds about 3 inches apart onto lightly buttered baking sheets and bake in batches until edges are golden, 10 to 12 minutes. Cool cookies on sheets until warm (about 2 minutes), then transfer to a rack to cool completely.

Number Of Ingredients 8

1/2 c margarine
3/4 c sugar
1 egg
1 tsp grated orange rind
1 Tbsp orange juice, fresh
1 1/2 c flour (i add a little more)
1/4 tsp salt
1/2 tsp baking powder

Steps:

  • 1. Cream butter and sugar. Add beaten egg, orange juice, and rind, then flour mixture.
  • 2. Drop by teaspoonfuls on ungreased cooky sheet, flatten with bottom of glass dipped in sugar.
  • 3. Bake at 375 degrees for about 7 minutes.

Tips:

  • Use fresh oranges. The fresher the oranges, the better the flavor of your wafers will be.
  • Zest the oranges before juicing them. This will help to release the orange's essential oils and give your wafers a more intense flavor.
  • Don't overmix the batter. Overmixing can make the wafers tough.
  • Chill the dough before baking. This will help the wafers to hold their shape better.
  • Bake the wafers until they are just set. Overbaking will make them dry and crumbly.
  • Let the wafers cool completely before storing them. This will help them to keep their shape and prevent them from sticking together.

Conclusion:

Orange wafers are a delicious and versatile cookie that can be enjoyed on their own or used in a variety of desserts. They are easy to make and can be tailored to your own taste preferences. With a few simple tips, you can make perfect orange wafers every time. So next time you're looking for a sweet treat, give orange wafers a try!
