Steps:
- Melt butter in a large skillet over medium heat. Cook onion, garlic, and red pepper flakes, stirring often, until onion is softened and translucent, about 4 minutes. Add orzo and stir until coated in butter, about 30 seconds. Add tomatoes and juices and cook, stirring, until liquid is reduced and tomatoes are starting to stick to skillet, about 4 minutes.
- Add salt and 2 cups water, increase heat to medium-high, and bring to a simmer. Reduce heat to low, cover pan (a baking sheet works well if you don't have a lid), and cook 8 minutes, stirring halfway through. Uncover and simmer 1 minute-mixture should be fluid but not watery. Stir again, then remove from heat and crack each egg into a quadrant of pan.
- Cover pan, set over low heat, and cook, rotating pan every 2 minutes or so, until eggs are nearly set, about 5 minutes. Sprinkle cheese over, avoiding eggs, cover pan, and cook until cheese is melted, about 2 minutes. Remove from heat and top with a few grinds of pepper and basil to serve.
STEAK AND ORZO IN TOMATO-OREGANO SAUCE
Excellent recipe from the cookbook "How to Make Love and Dinner at the Same Time". The idea is that the recipe is so easy that you have time to do... other things. Or, just enjoy the ease of throwing this dish together! It only takes about 15 minutes and then you let the crock pot do all of the work. You can use any boneless steak for this recipe, and you can find orzo in the pasta aisle.

Tips:
- Choose ripe, flavorful tomatoes: The quality of your tomatoes will greatly impact the flavor of your dish. Look for ripe, juicy tomatoes with deep red color. Avoid tomatoes that are bruised or have blemishes.
- Use fresh herbs: Fresh herbs like oregano, basil, and thyme add a pop of flavor and aroma to the dish. Use fresh herbs whenever possible, as dried herbs have a less intense flavor.
- Don't overcook the orzo: Orzo is a small pasta that cooks quickly. Be careful not to overcook it, as it will become mushy. Cook the orzo according to the package instructions, or until it is al dente (slightly firm to the bite).
- Season to taste: Taste the dish before serving and adjust the seasonings as needed. Add more salt, pepper, or herbs until the flavors are balanced.
Conclusion:
This orzo with plum tomatoes and oregano is a simple yet flavorful dish that is perfect for a quick and easy meal.
